Penuche

Reviewed: Dec. 2, 2009
I'm going to have to give this recipe another shot, next time following the directions a little more closely. I didn't let it sit undisturbed like I was supposed to, and I ended up with a very grainy texture. However, the flavor was incredible definitely worthy of a 2nd try.

Cherry Snowballs

Reviewed: Nov. 30, 2009
These were so easy! I drained the cherries on a paper towel beforehand though. I also substituted half of the flour with ground oats (rolled oats processed fine in a food processor). I had a problem dipping them in the coconut - I don't think my glaze was thick enough. I ended up dusting half of them with powdered sugar instead, and all of them were delicious.

Fudge Puddles

Reviewed: Nov. 29, 2009
These were so easy and turned out great! I substituted half of the flour with ground oats for a chewier texture and used about 3/4 cup of peanut butter. The dough was pretty sticky but still baked up fine with a little extra time. I only got 24 mini muffin size cookies with the dough. To make the well, I used the bottom of a shot glass. For the filling I used a batch of fudge that I had made earlier in the week that didn't set up properly and it was heavenly. Sprinkled with Christmas sprinkles it looks very festive.

Peanut Butter Dreams

Really good. I only used 3 cups of conf. sugar - it seemed like it would be too dry with all 4. Use a fork to dip the balls.

These are really tasty, but a lot of work. I would reserve these for really special occasions.

This was SO easy and extremely yummy. If you have been avoiding cheesecake because of the high calories, this is a fantastic substitution. Use Splenda for an even greater calorie difference.

Homemade Cereal

Wow. This is really good. I used slivered almonds and it came out really delicious. I only used 6 cups of oats though and left the other amounts the same. I am wondering if you can get good results if you cut the oil back to 1/4 cup. I may try that next time.

Peanut Butter Chews

Reviewed: Feb. 17, 2009
Try it this way! I took Trader Joe's high protein/high fiber cereal and processed it until fine. I used 2 1/2 cups of that and 1 cup of regular rolled oats. 4 1/2 cups of dry ingredients would have made this much too dry. Very very good and at least some nutritional benefit. Not a 'diet' food of course, but a 'cookie with benefits'...

So easy and so hearty. Personalize it with things like frozen sweet corn and a touch of brown sugar or molasses.

Whole Wheat Honey Bread

Reviewed: Feb. 15, 2009
This bread was very dense and reminded me of bread I've eaten in Germany. Not light and fluffy, but a meal in itself. Maybe not for everyone... Not really a sandwich bread, but would probably make great rolls. I think I will try 1/2 whole wheat and 1/2 white flour next time to lighten the texture a bit.

Chicken and Dumplings III

This was great and really easy. I didn't use celery, like so many other people. The dumplings cook best when they're made pretty small, if too big they can be kind of doughy.
