Brooklyn Girl's Penne Arrabiata

I made this for dinner tonight. It was pretty good, but needs more flavor in my opinion. I only altered it a little due to ingredients on hand. I did not have fresh basil, so I used dried, and I did not have tomato sauce, but I had tomato paste, so I just added water. I also used plain diced tomatoes, as well. I will probably try it again with the exact ingredients to see how it works that way.

Slow Cooker Chicken Taco Soup

This is the best taco soup recipe ever. The only difference I make it so switch out beer for chicken broth. I just do not have beer around and it tastes great without it. Goes perfectly with corn bread and butter!

Cheesy Shell Lasagna

This is my go to "lasagna" recipe. My kids love it and it is very good when you follow it exactly or alter it slightly. The only problem I have is the size pan, you really need to use a rectangular cake pan that is deep enough to layer otherwise if you use a glass casserole dish you may end up with two casseroles and less layers.

Slow Cooker Cocktail Smokies

So easy and so good. My only suggestion is to not use the all beef smokies, they are not as good, but still good.

Gourmet Caramel Apples

These are harder than they look and I had problems with the chocolate staying on with the carmel, the ones without carmet stayed on much better, but they where really good!

Pico De Gallo

Great recipe for a simple pico de gallo, I often use it in place of salsa and add avacado to it to make guacamole.

Barbecue Beef Cups

This is a good, easy recipe. The kids love that they are shaped like cupcakes or muffins. I agree that it could work for any number of fillings, and be delicious.

French Toast Casserole

Filet Mignon with Rich Balsamic Glaze

Followed recipe pretty much with the exception of having to sub for the wine. I also did not actually cook the steaks in the glaze. The recipe as a glaze alone was pretty good. I simply placed it in small containers for others to choose to have it or not.
