Potato Latkes I

These were so good and so easy! This was my first time making them, and they were delicious! I just used the large holes of my cheese grater to shred the potatoes. My 7 year old helped me make them and he LOVED them! Great recipe!

Baked Potato Skins

Beef Enchiladas II

Chicken Enchiladas I

I had never made enchiladas before but these were delicious! I used left over chicken, halved the tomato sauce, omitted the water and used red enchilada sauce instead of the taco sauce. I also used taco seasoned cheese. SO yummy!

Restaurant Style Egg Drop Soup

This is my go to recipe for Egg Drop soup. I always use this recipe for a starter when I am cooking Asian (I like to serve it with sesame noodles and egg rolls!) and it is fantastic! I never have ground ginger, so I usually omit it and use green onions instead of chives, but this is by far the best Egg Drop Soup recipe! Better than the restaurants! I like mine with a few generous dashes of pepper. Yum!

Pork Chops in Tomato Sauce

I am not a huge fan of pork chops but this recipe was pretty tasty! My family loved it. I added a couple of pinches of brown sugar and garlic powder to the tomato sauce. I also seasoned the pork chops with salt pepper and garlic salt and let them simmer for about a half hour.

Best Chicken Salad Ever I

This was great! I used a cooked chicken breast, omitted the pecan and relish, used 3 Tablespoons of light mayo and 1 Tablespoon of sour cream. I also added a few dashes of ground cayenne pepper. Delicious! Definitely a keeper!

Boilermaker Tailgate Chili

This was delicious! I actually left out the red pepper, the chili peppers and the cumin, used real bacon instead of bacon bits (3 strips) added about 1 tablespoon of sugar, but wow! It was spicy but more of an aftertaste spicy, not too spicy... Will definitely make again!

Best Ever Chuck Wagon Chili

I thought this was really good! I have never made chili before, but it turned out great! I added 2 cloves of garlic with the peppers and onions, and used an extra can of tomato sauce. I ended up putting in about 3 tsp. of sugar to cut back on the acidity from the tomatoes. I also left out the pepper, so it wasn't very spicy, but I added a little bit of Cayenne pepper. Will definitely make again!

Good Old Fashioned Pancakes

I thought these were great! I have never made pancakes from scratch, but I must say these sure beat Bisquick. They are very fluffy and moist. It is important that you cook them over a medium low or even low heat as to not burn them and to ensure they are cooked throughout. Very easy, and very good!

Super Sausage Gravy

This was delicious! I ended up adding about another 1/4 cup of milk, because it was so thick and I like my gravy a little thinner. But, wonderful! Will definitely make again!

Quick Chicken Cordon Bleu

Delicious! The sauce is reminiscent of a fondue sauce and the chicken turned out perfect! And the best part of all, it's all made in the microwave. My only complaint was that most of the bread crumbs came off of the chicken, but it was wonderful nonetheless!

Sausage Gravy I

I have to admit, my dad makes the best gravy ever ... but this came in to a close second! Delicious! I used sage sausage and added a few drops of hot sauce at the end. I also added more salt (because I'm a salt addict) but ... yes, very very good. Next time I'll try making it with hot sausage! Yum!

Six Can Chicken Tortilla Soup

Delicious! I needed something quick and easy for lunch, and I had all the ingredients on hand except for the tomatoes. I just made half of the recipe, but I substitued 5 ounces of chunky salsa for the tomatoes, and added extra chicken broth. I also added some taco seasoning, garlic salt and onion salt for extra flavor. In addition to the cheese and torilla chips, I also topped mine with slice black olives and a little sour cream. Simple and yummy!

Ground Turkey Casserole

I thought this was very good! My entire family loved it... I would, however, add another can of tomato sauce, because the cream cheese/sour cream is a bit rich. I also sprinkled seasoned salt on the ground turkey while cooking it. It would also be good seasoned with garlic salt/powder. I used reduced fat sour cream, and light cream cheese. Very yummy!

False Cabbage Rolls

I think this is a delicious recipe! My family loves it. I haven't tried adding additional seasonings, as some have suggested, and I still think it is very tasty and flavorful. I have forgotten to add the sour cream at times, and it is still wonderful.
