California Chicken

Absolutley mouth-watering! I took the advice of other reviewers and marinated the chicken in olive oil, garlic and lime juice before cooking in the skillet. I used the marinade to brown the chicken in the skillet instead of using additional olive oil. The only addition I will add next time will be to place cooked bacon on top of the chicken before baking in the oven. This recipe is definitely a keeper. I served it with rice pilaf and a fresh salad.

A Good Easy Garlic Chicken

One of the best and easiest recipes I have made for dinner in a long time. I decided to use extra virgin olive oil instead of the butter/margarine. I also added some fresh minced garlic and allowed it to brown in the heated oil before I placed the chicken in the skillet. I added the chicken to the olive oil/garlic mixture and placed half of the dry ingredients on top of the chicken. After allowing the chicken to brown for about 5 minutes I turned it over and added the other half of the dry ingredients to the other side of the chicken. It turned out absolutely marvelous. My boyfriend gave it rave reviews!! I served the chicken with a fresh grape tomato and mozzarella salad and French bread. Looking forward to making this again!!

Jalapeno Popper Spread

What a hit!! I decided to add 1/2 cup of Panko bread crumbs with 1 cup of Parmesan cheese to the top of the mixture before baking. This recipe turned out absolutely delicious and was gone before I knew it. I served the dip with French bread slices and pretzels. I am looking forward to making this recipe again real soon.

Slow-Cooker Chicken Tortilla Soup

This recipe was super-easy and absolutely delicious!! I took the advice of other reviewers and threw in raw chicken breasts at the beginning into the slow cooker instead of cooking them in a skillet first. I let all of the ingredients cook throughout the day on low while I was at work and when I got home the chicken was done and ready to shred (so easy to do). I topped off the soup with sour cream, fresh diced avocados and tortilla strips. YUM!!

Sangria! Sangria!

Wonderful recipe! The entire batch was gone almost immediately. I cut down on the amount of sugar used and opted to add all of the cherry juice from the maraschino cherries for extra sweetness...yummy! I also decided to add apples as well but found that it is best to add them right before serving so that they do not soak up all of the alcohol (they were pretty potent the first time I made this recipe and allowed the apples to soak overnight). By far the BEST Sangria recipe I have come across. Thanks for sharing!!

Italian Breaded Pork Chops

This recipe was absolutely delicious. The only change I made was to leave the garlic in the saucepan while I browned the pork chops instead of reserving it for another use. I found the flavor of the garlic encrusted on the pork chops absolutely mouth-watering as did the rest of my company. Thanks for sharing such a great and easy recipe with us! Looking forward to making this recipe again as it has now become a regular request at our house.

Chicken Breasts with Balsamic Vinegar and Garlic

Excellent!! I too omitted the flour on the chicken breasts according to other reviewers and the recipe came out absolutely delicious.The only other change I made was throwing in a few extra garlic cloves as we love garlic and can never get enough of it at my house! I am looking forward to making this recipe again real soon! Thanks Colleen for sharing your wonderful recipe.

Burrito Pie

This recipe was delicious! The only change I would make next time would be to spice it up a bit with some jalapenos. Otherwise it was great. It reminded us of our favorite food in college-burrito enchilada style-from a restaraunt that is not located in our hometown so it is nice to know we can duplicate it at home now!! Thanks for sharing this great recipe, looking forward to making it again soon!

I don't understand the negative reviews either. I too have made this dish over and over again and everyone who eats it absolutely loves it! The flavor has just the right amount of "kick". Many of my friends who have tried it have asked for the recipe. Thanks for sharing this wonderful recipe!
