Delicious Whole Wheat Fruitcake Cookies

Reviewed: Dec. 18, 2009
This has to be the easiest cookie recipe I have tried. I adore fruit cake but dont want to wait to eat it so this is a perfect recipe for me. I followed it exactly. The dried fruit mix had the peel included so I used 1 cup of mix and did not add the 1/2 cup peel called for and my chopped nuts were pecans. Even cook time was right on. Thanks Tuula

Peppy's Pita Bread

Reviewed: Dec. 4, 2009
This is my first attempt at pita. It was an easy recipe. The rolling out will take practice. I learned not to roll them to thin. The taste is very nice. I didnt get a puff like those pictured here but I dont think I would want then too. I like to cut them in small triangles and serve with hummas. I would make this again for sure!

This is really good. I added chopped raw apple and dried cranberries. Left out nuts ,didnt have any. Loved the yogurt. My yogurt had been drained for 2 days to turn it into a thick cream. Works great! My 5 year old really liked it.Thanks

Oregon Salmon Patties

Reviewed: Mar. 25, 2009
This is best salmon patty recipe Ive tried. I followed the recipe except using fresh cilantro as parsley and only 1 egg. I Refrigerated them (4 large patties)for an hour or so to help hold together better, then fried in the onion drippings. I topped with a blender hollandaise sauce: Put in blender(3 egg yolks,1 or 2 TBL lemon juice, 1/4 teas salt, dash red pepper.) Blend on low for a few seconds, slowly pour 1 stick(1/2 cup) HOT,HOT,HOT melted butter in and blend for a minute.)serve over salmon. The whole family loved this even our five year old.I Will make this my standard salmon patty recipe .

Ladyfinger Cheesecake

Reviewed: Feb. 5, 2009
OK, I know its not from scratch but its really good. I have made it twice and it is very easy, looks beautiful and tasty. Not as firm as a "real" cheesecake. Finding the ladyfingers was a challange but did find them in the deli section of a grocery store. There is a recipe here for home ladyfingers, have not tried that yet. Took this to a church dinner, none left. I Will make again and again!
