Chocolate Zucchini Muffins
This is a great base recipe - easy to play around with. Like a lot of other reviewers, I used 1/2 whole wheat flour and 1/2 regular flour. I cut the sugar by 1/4 cup and substituted 1/2 of the oil with applesauce. I also added milk chocolate chips. These are yummy, and the house smells wonderful while they are baking.

Fish Tacos
I followed the recipe as written. These were good, but not spectacular. The beer batter was a nice consistency. My kids weren't a big fan of them, but I think I'd have preferred them with flour tortillas instead of corn. The sauce was tasty, but mine was a bit on the thin and runny side.

Catherine's Spicy Chicken Soup
I followed this recipe except that I substituted 2 cans of Rotele for the salsa. What a GREAT recipe! Thanks so much!
