I am a student at Camosun College in Victoria, B.C. my major is Biology, but my weekend hobby/passion is cooking.
My favorite things to cook
I'm a real health nut. Many of my recipes fall under low fat, low calorie or high fibre. I like to develop my own recipes, many of which I will be posting sooner or later, some being quite simple and fast, others being rather time consuming and tricky.
My favorite family cooking traditions
A lot of my cooking skills originated from my mom. She started my whole passion for cooking. I accidentally have the same extra-lean hamburger recipe as my mom....I told her what I put in mine, and as it turned out, it was all the same stuff she used too:) We have a diverse culture background, so a lot of our traditions with food just involve making foods native to our origin countries (i.e. goulash, perogy)

None since I've been smart enough to cook properly.....but when I was 6 or 7 my sister and I had this genius idea for chocolate filled pancakes.....that was a flop.

Dark Chocolate Cake I
Spectacular! I made 2 batches: - Batch one was a half batch, which I made into 12 large cupcakes. I replaced the boiling water with boiling coffee and used canola instead of butter. Turned out lovely! About 20 mins at 330 F approx. - Batch 2, also a half batch, I made with spelt flour as I can't have wheat. Same as above, oil for butter and coffee for water. This time I added some instant coffee to the coffee to give it a bit more coffee taste. Turned out AWESOME! These were even fluffy which is difficult for spelt. For both batches, I took the advice of others and whipped the egg whites separate and folded them in....this may be why they turned out so fluffy and nice, not dense like some people have claimed :) I decorated mine with whipped vanilla icing and plain M&M's. YUM! Thanks, this one is for keeps!

Raspberry Almond Coffeecake
So good! Thanks! I have two huge blackberry bushes outside my house so I used blackberries instead of raspberries, and because I always want apples in my coffeecake....I grated up on apple (Braeburn) and I put the apple gratings down on the batter before I put the berries is. It turned out wonderful! I also used sweetened plain yogurt instead of sour cream because I had it in my fridge.

St. Patrick's Colcannon
Nom nom nom...SOOOO good!!! I made it to recipe except I used smoked ham instead of corned beef...I LOVE it. I'm Irish, so I appreciate authentic recipes ;) Next time, I'm thinking about pastrami...
