This is just like the recipe my family's been using for generations. Introduced my wife to this and she loved it. Thanks for reminding me about this simple yet delicious dish!

Great idea! Since I thought I'd play around with it, I used an alfredo sauce instead of a tomato base, and instead of regular ham, I went with a mix of prosciutto and pancetta. The wife absolutely loved it and I think this one is a keeper!

Asian Coconut Rice

My wife and I absolutely love this; it reminds us of many of the different rices we had while I was on duty in the Navy. One thing that some people have mentioned is that the taste is subtle and they would like to increase the sweetness; I have found that substituting the sugar with a "raw" sugar (I use Maui raw sugar) rather than a refined usually does wonders to boost the sweetness when needed.

Mushroom Meatloaf

This is an outstanding recipe. I have been playing with it from time to time, substituting different mushrooms to see which one works wonderfully. I've found that Baby Bellas and Whitecap/Buttons work the best on this, while Maitake gives it a very smoky flavor but does not bind the meat as well. Your milage may vary on this.
