Big Batch Kris Kringle Cookies

Reviewed: Jan. 4, 2010
My husband doesn't even like cookies (can anyone imagine that???) and he gobbled these things down, saying, "These are the best cookies EVER" --next batch was requested without nuts, add extra cherries, he inhaled them. The kids had to fight to get at the cookie plate. Great gift cookies, very pretty, too.

Zucchini Crust Pizza

Reviewed: Oct. 14, 2009
my hubby loved it! I give it 4 stars because I wasn't as thrilled. When browsing reviews I couldn't figure out how someone could describe a pizza as "quiche-like" but after baking mine, I found out why. It is soft and quichey, tastes like a thin quiche! didn't have Feta, used mozzarella, added sliced green & red peppers

To Die For Blueberry Muffins

oh, help me! I'm dead This recipe creates a muffin worth 2 bucks each! If not $4! --Otis Spunkimeyer, watch out! These are a WW's nightmare (I think these are well over 12 points each, eek!) but what a treat! Family loves these, the topping makes a sensation on top of apple pies, too!

Excellent! Served it on boring hamburger buns & still saw my SIL eat 2!!! (She's not a big eater, either! a waif of a girly) Defatted mine before adding Famous Dave's Rich & Sassy sauce, served up for Labor Day get-together. Wonderful with cole-slaw on top!!! yummy. Even had some today for lunch, extra yummy on GOOD rolls!!!

Slow Cooker Chicken and Dumplings

Yummy! I added a tsp of garlic powder and curry powder, each, for some boost-flavor. Comfort food, easily made! Used thights & breasts first time, just breasts 2nd time, both came out great. Also made my own biscuit dough & it was cheaper!

Orange Beef-Style Tofu Stir-Fry

Reviewed: Apr. 1, 2008
As Willy Wonka (Jonny Depp version) said, "Ew." Not at all pleasant, the tofu was just crispy, but softening in the sauce ...tofu -no taste about it! My hubby said, "crunchy, chewy water-flavored Chinese food. Please don't make this again." I spent well over 25 mins prepping to have to tell the kids to "eat up, Puh-leez?" and only end up tossing 3/4 of it. Ho hum. The sauce was good on the carrots though, which gives this one star.

Quick Chicken Divan

Fast, pretty easy and filling but did need a bit of curry or something to liven it up some. I'll make it again, mostly because it's so healthy and so fast!

Vanilla Wafer Cookies

Reviewed: Mar. 25, 2008
We used 3/4 Cup sugar, also tried dropping the cookies but they were puffy, unlike "Nilla Wafer" cookies so we rolled about a level teaspoon-full in the palm & then softly flattened. They turned out Excellent! If you like crispy edges, slightly chewey centers, and the taste of sweet, crispy butter --these are a dieter's nightmare on the hips but fantasy on the lips. My husband's a cookie-hater (chocolate-chip is the only one he'll even bother with) and he took a cereal bowl FULL of these from the cooling racks & a mug of milk & went off dunking & munching. ***!!!BEWARE!!!***

Olive Oil Bread

Reviewed: Jan. 18, 2008
I made it for 30 servings & only used 1 Tb. of yeast & 4 1/2 Cups flour (bread flour) and had to up the water to 13 ounces. Dough was sticky, like croissant dough. Rolled out beautifully thin & made 8 LOVELY rolls for Steak Au Juice sandwiches. Oooo, smells lovely, tastes great, like a bakery. I also kept a pan of hot water in the oven & spritz the inside of the oven at 10 min intervalls for the first 30 mns. Loved it (with my small changes, that's why I only give it 4 instead of 5)!

Fast and Easy Tofu Lo-Mein

Reviewed: Jan. 18, 2008
This was VERY good for a fast supper. My pantry was bare, I didn't have any frozen stir-fry veggies but I had carrots, celery, mushrooms and onions. It turned out VERY tasty & my whole family of six, plus a baby, polished off an 8 serving meal. I baked my tofu in soy, garlic, ginger and a bit of honey, instead of frying it because I needed to fry up some ground chicken @ the same time (I only had one box of tofu!). I never had tofu taste great! Frying it would have gotten the same results. Satifying and FAST!

Old Fashioned Macaroni Salad

Waaaaaaaaaaaaaaaaaaay too much onion, way, way, WAY! Followed exactly, stunk up my fridge, tasted alright but never to be duplicated. Sorry. 1 whole (even small) onion AND the garlic powder were overkill.

Unbelievable Spinach Calzones

Reviewed: Mar. 9, 2007
I was out of ricotta so I used large curd cottage cheese & when they were nearly done baking they burst & spilled out on the pan (but that crispy, cheesey stuff was tastey!). Brushed them with garlic butter & coarse salt prior to baking & we dipped ours in jarred spaghetti sauce thickened with 2 TBs of tomato paste, WOW! fast dinner, fattening & tastey.

Awesome Slow Cooker Pot Roast

Reviewed: Jan. 31, 2007
I feel silly adding any comments to this because of the amount of reviews that RAVE. BUT, my daughter (12) couldn't quit shovelling this down! Our entire family absolutely loved this. Note: I used a 3 1/2 pound roast & had to remove about a pound for it to fit in our crock pot, prior to crocking it all day... also, if you're going to leave the house, don't leave it on HIGH because there's so much going on in there & it just splashed all over through the edges of the lid on mine. DELICIOUS and unbelievably simple! Great with mashed potatoes, yummy gravy!

Stir-Fry Pork with Ginger

Reviewed: Jan. 25, 2007
If I could give this 20 stars I would! I've been enlisted to start an "all Chinese" menu for 2 weeks or more, a la my husband and there have been 6 nights so far, when my husband dug into this with added stir fried veggies on Basmati rice, my husband said, "I think this is the best you've EVER made, yet!" and I agreed, along with all of our kids --except the 3 month old ;}! Very, very good, nice & salty & with the WW points system, this was 8 with the cup of rice, lower it with brown rice! Mmmm! I ended up adding more soy & a bit more Tahini (sesame oil) & then 1/3 cup water with a heaping tsp of corn starch to make more 'gravy,' which was sensational, by the way. No need to pass the salt.
