This is SO much better than I expected! It tasted like something from a restaurant. The only thing I did differently was to use lite sour cream instead of mayo and pepper jack cheese instead of mozzarella. Broil for a couple minutes for an amazing veggie appetizer!

Cucumber Sandwiches III

Excellent appetizer. I followed the recipe exactly except I used all "lite" products. My guests loved this and so did I! Update: I used the cream cheese mixture to make deli pinwheels (tortillas filled with cream cheese, turkey, lettuce, onions, and green peppers) and everyone loved that appetizer as well!

Pumpkin Pie Squares

As written, this recipe is very good. I would recommend trying it as written first before making any adjustments. I doubled the crust as suggested by some reviewers and I prefer the thinner crust..it's all a matter of preference.

Spinach and Feta Pita Bake

Easy, quick, and delicious. I made the sun-dried tomato pesto from scratch (recipe from this site) and added chicken and mozzerella cheese. I would make this again.

Lemon Curd

Perfect consistency and lemony flavor. I used the microwave and strained the curd at the end. I filled thumbprint cookies (also from this site) with this curd with great results!

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

These.Cookies.Are.Amazing. best cookie recipe on this site! The ingredient portions are perfect, the oven temp and time are right on, and the cookies come out delicious. Only thing I did differently was to add 1/2 tsp. cinnamon for a slightly diff. flavor.

Mexican Veggies with Queso

I just wanted to thank the submitter SO MUCH for this recipe because finally it is not a chore to eat vegetables. I make this all the time to get my veggies in. I usually add corn and cilantro because they go so well with this dish. I also use whatever cheese I have on hand and the result is always good!

Apple Pumpkin Muffins

I personally didn't think the apples added anything to this muffin. Overall though, these muffins were pretty good. I added chocolate chips for an extra kick.

BREAKSTONE'S Triple Chocolate Bliss Cake

As far as boxed cake goes, this was pretty good. The make-shift ganache however was AMAZING and is the reason why I'm giving this 5 stars. I can't wait to try making the topping with white chocolate or even butterscotch chips!

Artichoke Chicken

Not bad. I used marinated artichoke hearts and used half sour cream/half light mayo. I also breaded the chicken breasts and pan-fried them before topping with artichoke and putting in the oven. Nice for a change.

Cinnamon Swirl Bundt Coffee Cake

I personally thought this cake was ok, but my family LOVED it, absolutely loved it. They devoured it within 2 days even though they "only like chocolate cake". I followed the recipe except I added chocolate-covered toffee bits along with the cinnamon/brown sugar filling.
