This recipe is great despite the fact I completely messed up the premise of the recipe. My little gizmo to cube stuff broke, so I tossed my zucchini into the food processor, sauteed in olive oil, garlic, red pepper flakes and Italian seasoning. I added a roasted red pepper and garlic tomato sauce along with some mozzarella and provolone shredded cheese mix. So I'm looking at this zucchini mix that looks more like sloppy joes wondering what I'm going to do now. I split the buns and served them like an open face sloppy joe, tossed some more cheese on top and WOW! This is the most delicious way I've ever had zucchini! My husband had seconds and my picky 7 y/o son ate quite a bit without complaining.
