Garlic Soup

So simple, yet sooooo good. It was just what I was looking for. I used a bulb of garlic and some jarred garlic as well. I substituted olive oil for the butter and put in 8 chicken bouillon cubes, used some canned diced tomatoes and put in some gnocci about 10 minutes before serving. Sooooo good. Thanks for a great recipe.

Chicken and Cashews

I didn't have time to cook this on the stove so, I baked it in the oven. I combined the sweetener, cornstarch, water, soy sauce and olive oil in a bowl. Added a crushed chicken bouillon cube and used onion powder instead of an onion. Placed the chicken (frozen chicken tenderloins) in a baking dish and poured the sauce over the chicken, and added the cashews. Baked it for 1.5 hours at 350 degrees. My guys loved it!!

Best Ever Banana Bread

This banana bread is so good. I had to ditch my old recipe because it called for butter/margarine, and I have become lactose intolerant. So, I tried this one because of the oil. I used canola oil and lactose free milk instead of the buttermilk. I also added a streusel topping as one of the other reviewers stated, and it was so delicious. I'll be using this recipe from now on. Thanks so much for sharing.

Chicken and Biscuit Casserole

Don't miss out on trying this recipe. So delicious!! The first time I made it, I cooked it on top of the stove in a large deep skillet. It worked just fine, but the next day, the "soup" had soaked into the biscuit portion and I had to make more soup to pour on top of the biscuits. But it stilled turned out great. The second time I made it, I skipped making the biscuit portion and just put gnocchi in the "soup" portion, and it turned out as a wonderful stew. When my daughter makes it, she makes the biscuits separately, puts a biscuit into a serving bowl and pours the soup right over top. Still turns out great. My husband and I love this!!

Super Chicken Casserole

I modified this for health reasons. I used some herbed salad croutons that I had on hand, skipped the parmesan cheese, used fat free butter spray for the melted butter, 1 can of 98% fat free broccoli cheese soup, fat free mozzarella cheese and 1 Tbsp. of real garlic. My husband said it was pretty good and my oldest son said it was really good. It was easy to make. Next time I may add some poultry seasoning.

Chicken Marsala

Absolutely wonderful!! I had to modify this for health reasons, but it still turned out great. I used chicken tenderloins. For the sauce, I used olive oil and fat free butter spray. I didn't have any Marsala wine or cooking sherry on hand, so I just used some sweet table wine. The combination of the mushrooms, wine, olive oil and butter spray was such a delicious combination. When my husband tasted it, his eyes opened wide and said how good it was. I made enough for left overs for tomorrow night, but my husband said I could make for he next three nights. He really liked it. It took very little time to make, so I'll be making this often.

Apple Butter Bars

These are good. I like my bars moist, dense and chewy. To accomplish that in these bars, I substituted 2 Tbsp. of Egg Beaters for the egg and used only 1/4 tsp. of baking soda. That way the batter doesn't rise very much and the bars become more chewy. I doubled the powdered sugar and used 1/2 tsp. clear vanilla and 2 1/2 Tbsp. milk for the glaze. My daughter also liked them. These would be great for people that don't like or can't have chocolate.

Fruit Punch

I threw a bridal shower for my daughter today. Everyone loved this punch. We had 52 guests and the punch bowl was filled a few times. I had the recipe displayed by the punch, and I was told by many of the guests how good it was. This recipe I'll use from now on for all my parties. It's a keeper.

Lemon Chewy Crisps

If you're looking for a really lemony cookie, this isn't it. I don't care for lemon zest, so I added about 1.5 - 2 tsp. lemon extract, and 2 drops of yellow food coloring. The texture was exactly as stated, "a chewy cookie with a nice crisp brown edge". But a good lemony taste just wasn't there. I doubled the batch as others suggested, but my cookie-eating family ignored these. Sorry.

Vegetarian Chickpea Sandwich Filling

I love chickpeas!! I never thought of putting mayonnaise on it and making it into a salad. I've always just put in on top of salads. I'm not big on dill, so I eliminated that. I ended up using 1/4 c. fat free Miracle Whip to make it tangy. But it still was a bit bland, so I put the filling on a whole wheat soft tortilla, drizzled some honey mustard on it and added some chopped lettuce. Now, I have a new favorite! Thank you for the recipe.

Homemade Shake and Bake Mixture

My whole family raved about this, and requested to make it quite often. I was short on the bread crumbs, so I used 2 c. bread crumbs and 2 c. crushed whole wheat flake cereal. I also was out of paprika and oregano, but the taste was still great. I may end up trying this on fish as well. Much cheaper than store bought, over-all. I'm all for that!

Chicken and Stuffing Casserole

This is definitely a keeper. So simple and sooooo good. I added a large onion sautéed in olive oil, used 5 boiled chicken tenderloins cut into chunks, used the reduced fat soups and a whole can of fat free evaporated milk. We do not use the boxed stuffing, so I used fat free salad croutons and added 1/2 tsp. of poultry seasoning. It was delicious!! Can't wait to make it again. Thanks for a super recipe!

Grandma's Heavenly Onions

I made this for 15 people for Christmas Dinner. It was a big hit. I cooked the onions in olive oil, added a bit of fat free butter spray, used a combination of skim milk and fat free half and half, fat free cream of mushroom soup and fat free swiss cheese slices. Everyone loved it.

Pecan Pie Bars I

These are dynamite. Made these for Christmas and they were the first to be eaten. I substituted 3/4 c. of canola oil for the butter and 3 Tbsp. canola oil for the 3 Tbsp. of melted margarine, and 1 c. Egg Beaters for the eggs, a much healthier option all around. The crust came out nice and flaky. I'll be making these for my daughters wedding.

Mom's Macaroni and Cheese

I was concerned about this being bland without any onion or any other seasoning, so in the amount of time I had, I added some minced garlic. During dinner, my husband was silent through the whole meal. I asked him what the thought about the macaroni and cheese, he just said it was okay. The next night, he asked me what was for dinner and I told him the leftover macaroni and cheese. He just stared at me. I threw the rest out and made something else. I won't be making this again.

Vegan Brownies

I wanted to try these since the submitter stated how gooey they were. I was so disappointed. More on the dry side than anything and some-what crumbly. The dough was very thick when spreading into the pan. They did not hold together after cutting. They were more moist after 3 days, but still crumbly. My kids usually devour brownies, but these have been sitting around. I'm not a total vegetarian, but I do eat healthy foods. These need at least some Egg Beaters to hold them together, and I understand that would not make them vegan, but they need something to hold the dough together. Shortening is not the answer if you are looking for a healthier alternative. I would at least recommend cutting the baking powder to 1/2 tsp., that way the dough would not rise very much and become chewier.

D' Best Chicken N' Dumplings

For those of you who may be hesitant to try this recipe due to some of the negative reviews, please try this suggestion: Instead of using just water, use canned or boxed chicken broth or adding chicken bouillon cubes to the water. I used chicken tenderloins (cut into tiny pieces) instead of whole chicken due to health reasons, and I can see why it could turn out bland. I also increased the onion to a whole onion, and added a couple of carrots. This tastes even better the second day.
