Mom's Macaroni and Cheese

I was concerned about this being bland without any onion or any other seasoning, so in the amount of time I had, I added some minced garlic. During dinner, my husband was silent through the whole meal. I asked him what the thought about the macaroni and cheese, he just said it was okay. The next night, he asked me what was for dinner and I told him the leftover macaroni and cheese. He just stared at me. I threw the rest out and made something else. I won't be making this again.

Vegan Brownies

I wanted to try these since the submitter stated how gooey they were. I was so disappointed. More on the dry side than anything and some-what crumbly. The dough was very thick when spreading into the pan. They did not hold together after cutting. They were more moist after 3 days, but still crumbly. My kids usually devour brownies, but these have been sitting around. I'm not a total vegetarian, but I do eat healthy foods. These need at least some Egg Beaters to hold them together, and I understand that would not make them vegan, but they need something to hold the dough together. Shortening is not the answer if you are looking for a healthier alternative. I would at least recommend cutting the baking powder to 1/2 tsp., that way the dough would not rise very much and become chewier.

D' Best Chicken N' Dumplings

For those of you who may be hesitant to try this recipe due to some of the negative reviews, please try this suggestion: Instead of using just water, use canned or boxed chicken broth or adding chicken bouillon cubes to the water. I used chicken tenderloins (cut into tiny pieces) instead of whole chicken due to health reasons, and I can see why it could turn out bland. I also increased the onion to a whole onion, and added a couple of carrots. This tastes even better the second day.

Best Big, Fat, Chewy Chocolate Chip Cookie

By far the best cookie recipe on this site. I made it healthier though. Substituted canola oil for the butter. You have to melt the butter anyway, so why not use canola oil, it's better for your heart. Used 1/3 c. Egg Beaters instead of one whole egg + the egg yolk. We do not use chocolate chips due to the cocoa butter, so I used some chopped sugared nuts that I made for Christmas, that were in the freezer. So yummy!!

Blonde Brownies I

These are the absolute best blonde brownies I have ever made!! I almost doubled the recipe and pressed the mixture into a 10 x 15 sponge cake pan. They came out incredibly chewy. Here's how: 2 c. flour, 1/2 tsp. baking powder, 1/8 tsp. baking soda, 2/3 c. butter/margarine ( I used Smart Balance), 1 & 3/4 c. packed brown sugar, 1/4 c. Egg Beaters, 1 & 1/2 Tbsp. vanilla. I omitted the chocolate chips. I usually like to add nuts to my brownies, but didn't this one time. Baked for about 20 minutes. Watch, as the dough can quickly brown. I'm sticking with this recipe from now on!!

Sweet, Sticky and Spicy Chicken

This chicken was sooooo good. I decreased the hot sauce quite a bit, and cut the soy sauce in half as others suggested, and used olive oil in place of the vegetable oil. My husband doesn't care for sweet chicken, but he really liked this.

The Best Lemon Bars

These are by far the very best lemon bars on this site. I've tried a few others, and I'm sticking with this one. Not to go against the submitter, but you CAN substitute. I used Smart Balance for the butter, 3/4 c. Egg Beaters for the 4 eggs, and 1/2 c. bottled lemon juice for the 2 lemons, and they turned out great!! I can't wait to try them with the lime flavor.

Chocolate-Peanut Butter Cookies

I have mixed reviews about this cookie. For ease and convenience, it gets 5 stars. For taste, 3 stars. My husband and boys gave it an over-all 4 stars. The taste is a soft and extremely mild, peanut butter sugar cookie. When mixing the batter, it was quite thin. I only use the reduced fat Bisquick, so I added an extra 1/2 cup or so to thicken it up. It was still quite thin, so I put it in the fridge for about 24 hours. It thickened up very nicely was I was able to roll it into balls. They baked very well, about 9 minutes. I may make them again.

Byrdhouse Marinated Tomatoes and Mushrooms

So delicious and so different. I cut the mushrooms into quarters and used Splenda instead of sugar, and canola oil instead of vegetable. My husband loved it. Update: I increased this to 50 portions for a special party. It was a big hit. Everyone was raving about it. Cherry tomatoes are hard to find for some reason around here, so I just used grape tomatoes.

Amber's Peanut Butter

I make this all the time. I use a 16 oz. jar of dry roasted unsalted peanuts, 1 Tbsp. canola oil and 1/2 c. Splenda. You can use any type of nut you like. The more oily the nut, the less oil you will need to add and vice versa. I've used cashews, almonds, walnuts and pecans. Sometimes I use a combination of all of them. That's when it tastes really good!!

Farmer's Casserole

Please understand that I had to totally change this recipe for health reasons. My husband is unable to eat a lot of the listed ingredients, so I had to substitute quite a bit, but this still came out very tasty. I sustituted 2 cans of diced potatoes(drained)for the hash browns, several slices of fat free swiss cheese for the pepperjack cheese, but also added some red pepper flakes for flavor, shredded chicken for the ham, 1 onion cooked in chicken stock for the green onion, 1 c. Egg Beaters for the 4 eggs, used fat free evaporated milk, and omitted the salt and pepper. Next time I may add some cooked spinach. My husband asked me to make it again soon.

Cranberry Coffee Cake

My family really liked this. I was concerned after reading some of the reviews about it being dry. So, I added 1 Tbsp. of canola oil to the batter just in case. I may add 2 Tbsp. next time. I doctored this up by adding a cream cheese mixture. In a food processor, I mixed 1-8 oz. pkg. of fat free cream cheese, 1 Tbsp. lemon juice and 1 Tbsp. of sugar. Dropped it by tablespoons onto the batter after dropping on the cranberry sauce. Hint: when making the glaze, use clear vanilla extract. I used imitation vanilla and ended up with some brown goo. I also wonder if adding 2 Tbsp. of milk was way too much. It was so runny. Next time I will use only 2 tsp. of milk.

Mini Sour Cream Biscuits

I used fat free sour cream and substituted canola oil for the melted butter. You need to melt the butter anyway, so why not make it healthy! Very light and tastey. I'll definitely be making these again.

Cappuccino Muffins

Delicious!! I used Egg Beaters in place of the egg and substituted canola oil for the butter. You have to melt the butter anyway, so why not make it healthier by using canola oil. We do not use chocolate chips in our home due to the cocoa butter, so I used 2 Tbsp. of cocoa powder in its' place. Also took some to work and everyone loved them.

Apple Strudel Muffins

I replaced canola oil for the butter, reduced the sugar to 3/4 cup, used 1/2 cup Egg Beaters for the eggs and added a bit of cinnamon to the batter. Also doubled the streusel topping. Wonderful!!
