I am very much into healthy cooking and baking. Since my husband had a heart attack, I am into turning so many common unhealthy recipes into extremely healthy recipes. And that goes for everything. Now there are some foods that we just don't eat. For instance, pork, most beef, all processed meats and some baked goods such as doughnuts. Also, anything with hydrogenated oils (very, very bad for you). I can take most any baked item and substitute the butter, margarine and shortening, and use Smart Balance spread or canola/olive oil or apple sauce. I always use less sugar and when I feel the need to use some whole wheat flour to a baked recipe, I know I am making it even more healthy.
My favorite things to cook
Any main dish such as a casserole or quiche. I have an excellent recipe for an easy lasagne that does not require pre cooking the noodles. Buy using fat free ricotta cheese, egg beaters and eliminating all meat, the recipe is virtually fat free. It is delicious. I get rave reviews on it every time.

Adding LOTS of onions. They are so good for you.

Any meal that my husband asks for seconds.
My cooking tragedies
When my husband and I were first married, I made a fish recipe that called for milk. It quickly cooled down after taking it out of the oven. The more it cooled down, the worse it tasted. I have never made, nor will ever make a recipe again, that calls for fish and milk together.

Mom's Macaroni and Cheese
I was concerned about this being bland without any onion or any other seasoning, so in the amount of time I had, I added some minced garlic. During dinner, my husband was silent through the whole meal. I asked him what the thought about the macaroni and cheese, he just said it was okay. The next night, he asked me what was for dinner and I told him the leftover macaroni and cheese. He just stared at me. I threw the rest out and made something else. I won't be making this again.

Italian Wedding Soup I
A great light meal. I skipped the meatballs but served it with some bread. My family loved it.
