My favorite things to cook
"Plant-power"- based foods, Asian, middle eastern, pretty much anything foreign. If I can substitute a vegetable for a meat, I will (or make halfsies if I'm cooking for a group) if I can substitute white flour, white rice, white sugar, butter, eggs, for something plant based, I will. But I will only do it it doesn't compromise the taste in any way shape or form.

Sweet Potato Enchiladas
This was a good recipe. I didn't have tortillas so I just boiled whole wheat pasta and tossed into the mix.I poured entire thing into a casserole dish and baked at 350 with cheese on top. I turned out fine. This is a nice side dish the way I made it vs a main dish. It does make a great vegetarian side dish that is quite filling. very interesting texture.

The Whole Jar of Peanut Butter Cookies
These are quite good; moist, delicious, fulfilling! However, I made the following substitutions to remove all white sugars and flours, and to make it a "plant power"-based dessert.: 1. replaced white flour with 1/2 cup of whole wheat flour 2. replace white sugar for turbinado sugar (same amount). Lowered Brown sugar by 1/4 cup 3.replaced the eggs with ENER-G Egg replacement (per the directions on the box) 4. Replaced milk butter with veggie butter (any kind should be fine) 5. Used natural organic peanut butter (with the oil, and yes, the oil went right in. I happened to have on hand peanut butter with nuts, but smooth should be fine. The jar is an 16 oz.) and that's it. After I baked them (they also had to be under baked. 12 minutes seemed to be fine for my oven.)they were delicious and gone! hope this helps anyone who is trying to eat a plant- based diet and still enjoy a great taste!

Sweet and Sour Meatballs IV
I used ground turkey instead, came out fine. Served over egg noodles. Next time I will figure out a way to make extra "sauce" from the pineapple juice, because more would have made it more 'stroganoff-y" which we would have preferred.Overall, we liked it and will probably make it again.
