Orzo with Parmesan and Basil

Simple and delicious every time. When I don't have chicken broth on hand I use two cups of water plus two chicken boullion cubes and omit the extra salt from recipe.

Baked Pineapple Casserole

Good! Went great with our ham dinner. I did feel that the top was really good while the bottom was a little soggy. Next time I'll make it in a 9x13 so it's thinner. Great taste though!

Chicken Enchilada Dip

This was a big hit at a get-together! I used half mayo/half sour cream and added chopped green onions (had on hand). Instead of fresh jalapeno, I used 2oz. chopped from a small can. It was so yummy and not too spicy.

Autumn Cheesecake

Almost perfect... just a little tweaking! I did double the cheesecake ingredients, and I'm so glad I did. One thing I didn't care for was the crust... for some reason it tasted a bit burned, so maybe next time I won't precook it. I also didn't care for the nuts in it; next time I'll just make a regular graham crust. I did microwave the apples to soften-- they turned out perfect. I'd highly recommend topping the apples with a crumb topping... I used the recipe for the topping on "Apple Crisp II" and sprinkled the pecans on top... it was AWESOME!

Swedish Meatballs I

Turned out delicious... just what I was looking for, thanks! Made with ground turkey. Next time will also try the lowfat soups so it's not so heavy. I substituted Italian bread crumbs for the cream of wheat. Onion was a little overpowering for my husband, maybe next time I'll use the dried minced or just onion powder. Served over No Yolk egg noodles... yum!!!

Pina Colada III

I'm sorry, I did not like these at all and i LOVE pina coladas. If you make as directed, the flavor is okay but the consistency is completely watery and not at all slushy, let alone creamy. Worst of all, within minutes the whole drink separates, so beware if you care about presentation. I was able to doctor mine up a bit by blending in fresh pineapple and more ice, but still not great.

Chimichurri Sauce

Good! Served over "Marinated Flank Steak." Makes a LOT of sauce. Note: I don't know if my dried oregano was expired, but next time I would omit it or use fresh. It never really got "soft," even after a couple days in the fridge, and gave the sauce a bit of a gritty texture.

Marinated Flank Steak

So delicious! Like another reviewer, I grilled half of the steak for dinner one night (delicious!) and put the rest of it in a slow cooker with a packet of fajita seasoning and 1/2 cup water for fajita meat the next night. Both were outstanding! Flavorful and tender!

Chocolate Cream Cheese Frosting

Yum!!! I added the chocolate mixture slowly, tasting as I went, and didn't end up using it all (probably about 3/4 of it). This frosting is creamy and perfectly cream-cheesy!

Fluffy Peanut Butter Frosting

I was disappointed with this frosting. I scaled the recipe down to frost 8 cupcakes, and used reduced fat peanut butter and skim milk as they were all I had on hand. I added the powdered sugar and milk alternately, then beat well for 3-4 minutes. The taste was good, but my frosting wasn't "fluffy" at all, and had a definte greasy sheen. Maybe using whole milk of cream would fluff it up better?

Dark Chocolate Cake I

This chocolate cake is outstanding! I used it to make cupcakes, and it yielded a ton. They cook up quickly, so keep an eye on them (mine were done in 15-20 minutes on 350). I am not a huge chocolate fan, but for some reason I can't stop eating these! I filled one batch with "Cool Whipped Frosting" and topped with "Satiny Chocolate Glaze." The other batch I topped with "Fluffy Peanut Butter Frosting," all from this site. Both were delicious, thank you!

Cream Cheese Frosting II

WOW!!! This frosting is the absolute best. You really can't mess it up, either! I used a little less than 2 blocks of Neufchatel cream cheese (all I had on hand), a stick of unsalted butter and the vanilla... I didn't really measure the powdered sugar, just kept sifting it in the bowl, mixing, and adding to taste. It tastes wonderful! I'm using it to top cupcakes made from the Strawberry Cake II from this site.
