Chicken and Spinach Alfredo Lasagna
I wanted to make Lasagna but my Mom was coming to dinner and she is not a fan of red sauce so I was looking for a recipe for Chicken Alfredo and found this. It was the best of both worlds so I decided to try it and YUMMMMMMM! Boy was it a hit! I made just a few small changes by omiting the mushrooms after lots of objections and used wheat pasta to make it a bit more carb friendly, I also bought a rotisserie chicken from Wal-Mart and used it. I will CERTAINLY make this again!

Cream Cheese Frosting II
VERY yummy icing, I used this on Sam's Famous Carrot Cake (also a WONDERFUL recipe) and the 2 complimented each over VERY well. It is VERY important to make sure the cream cheese and butter is soft before attempting to mix. I learned that the hard way and spend 30 minutes cleaning up after my mixer catastrophe. All in all a VERY yummy icing recipe.

Sam's Famous Carrot Cake
I was really happy with this version of carrot cake. The ONLY thing I would change next time is to add less raisins. My husband and I are not huge raisin fans so I would half the amount of raisins or omit them all together. I LOVED the walnuts and even added them on top of the cake after the icing. I thought this cake was moist enough to make as a loaf without the icing as well. Overall an excellent recipe and definite keeper!
