Barley Bake

I make a highly altered version of this recipe. I leave out the butter and pine nuts; I just lazily throw a bunch of raw vegetables in the pan with the barley. It bakes for long enough. I also put chicken on top and bacon makes great flavoring. Some dried thyme is also nice. Make sure you cover it!

Rosemary Pasta in Roasted Garlic Sauce

This stuff is amazing! It's good with whole wheat pasta, too. Make sure you don't use too much pasta, and use a bit less of whole wheat to let the flavor come through.

Corn and Black Bean Salad

This salad was totally overpowered by the balsamic vinegar. It was edible, but I wouldn't get excited about making it again. I've found another recipe for black bean and corn salad that I prefer.

Caramelized Oatmeal Raisin Muffins

This recipe is spectacular! Changes I made: I didn't bother coating the raisins with flour, and I used powdered milk in place of evaporated. These tasted wonderful and I am adding the recipe to my collection.

Granny's Corn Flour Tortillas

These did not work at all for me, and I have successfully made tortillas before. They were dry and salty. Brown spots never appeared when I cooked them, although I tried frying them in three different kinds of fat. The dough was very dry and crumbly and hard to work with. I will look for a different corn tortilla recipe.

These turned out very well. They tasted a lot like brownies. Although the recipe was successful, they weren't really to my taste--too sweet. Nevertheless, the recipe is good.

Colonial Brown Bread

This was really great, even with all my substitutions. I used reconsituted powdered skim milk with lemon juice for the buttermilk, half ground oatmeal in place of the whole wheat flour because I didn't have enough, and I added some dried fruit and nuts. It was very moist out of the oven, and just as good the next morning. I think the oatmeal really helped keep it moist.

Overnight Cinnamon Rolls I

These are great! I had never tried letting something rise overnight before, but it worked perfectly. they are wonderful without the glaze--in fact, I think I like them better that way. If you make the glaze, milk works in place of half and half.

Coconut Cream Pie I

This was very easy and very good. I toasted the coconut in the oven at 325 until it was golden-brown, and I added 1/2 teaspoon coconut extract to the pudding mixture. Everyone liked it.

Pie Crust III

This turned out very nicely, especially for an oil-based pastry. It was a warm day when I made it, and it was very soft, but it still rolled out fine (with lots and lots of flour). I will use this one often, and maybe try it with whole-wheat flour next.

Easy Key Lime Pie I

This tasted wonderful and was easy to make. I added the zest of two limes, but I don't think it was really necessary. I made it with a homemade regular crust. I might make more filling next time --it looked fine with the whipped cream on top, but I really liked the filling.

Amber's Sesame Chicken

This recipe is a fabulous idea, but I haven't gotten consistent results with it. More specific cooking instructions would be helpful. Meanwhile, I'm using trial and error to develop a more stable version. Definitely a keeper with changes!
