About this Cook
I'm the mother of four wonderful kids, ages 2, 12, 14, & 16; and married to an equally wonderful Texan! A former health inspector, now I raise goats on a 60-acre farm and ride my own motorcycle. I love to cook, but hate to clean up...makes having kids really convenient!

Bread Pudding with Whiskey Sauce III
Great! If I would do anything differently, I would reduce the amount of sugar in the sauce...it was a little too sweet in my opinion. Aside from that, perfect! (I did use a water bath for baking in a 13 x 9 pan, at 350F for 45 minutes.

Gooey Butter Cake I
While the cake is not bad, it's not a true St. Louis Gooey Butter Cake, not even close, so the search continues. Definitely use a rich yellow cake mix, as it becomes very bland with a lighter mix. It does require attention to baking time to prevent it from being over/under-cooked. Adding flavoring to the cream cheese might help--and you could probably reduce the amount of sugar without detriment.

Sweet Potato Pecan Waffles
Quite good! I used a large fresh sweet potato, baked for 8 minutes in the microwave. They peel quite easily and you don't get the "canned" taste. Because canned sweet potatoes are in syrup, a bit more sugar might be appropriate, although I found the tablespoon to be enough for my family's tastes. I felt the recipe calls for a smidge too much baking powder; I'll reduce it by 1/2 tsp. the next time around. I'll also try halving the nutmeg and adding some cinnamon--but these are just changes based on my personal tastes.
