Summer Nights Eggplants
I loved this recipe but made some alterations: I microwaved the cubed eggplant,onions and green pepper because too much olive oil is absorbed to saute this. Instead I finished the veggies off by sauteing them with the olive oil, garlic to brown them a bit. I added the tomatoes and I added a little ground lamb because I had some left over. I added only 1/2 the breadcrumbs to the veggie mixture. I followed the rest of the recipe as written but I lightly shook a bit of ground cinnamon over the feta before I melted it. Very Greek; very good!

Chocolate Zucchini Bread I
Well, this didn't stay in my kitchen very long! Everyone loves this recipe because it is more chocolate-y than sweet. I will always use the unsweetened bar for that reason. I used the applesauce/oil mix and it gave a wonderfully moist loaf. I did add a little more flour before I poured into mini-loaf pans. Hint: Mix your chocolate chips with 1/4 c. flour before you add to the mix! I cannot wait to make this again and I hope it freezes well--I've got a lot of zucchini.

Pineapple Zucchini Bread
Just made this and it is very good. I diced dried pineapple and mixed in with the glaze. Next time, I will poke hotes with skewer in the top of the baked bread and pour glaze over to make it more moist/more tasty! May even use 1/4 cup applesauce and 1/4 cup butter, too.
