Teriyaki Pork Tenderloin

This was very easy to make and the meat came out tender and juicy. However, the Teriyaki flavor was faint, so I would do a couple of things differently next time. 1) Double the sauce and keep half out for use after baking, 2) cut pork into bite size pieces before marinating so that each bite is coated in the sauce or perhaps just use the extra sauce to baste while cooking. A good solid recipe. Thanks!

Aunt Teen's Creamy Chocolate Fudge

Very easy, and very yummy! This is the first fudge I've ever made, and everyone who tried it, loved it! Creamy, sweet and fudgy. Update: 12/08 - I have to update and say that this recipe isn't foolproof. I tried it again this year and it totally broke on me - grainy, disgusting and separated (huge pool of oil). Although it did set, the flavor was definitely not as good and the texture was completely off. I don't know what I did differently than the first time I made it, but beware. It can go wrong.

Caramel Bars

These have potential, but I think they need a little work. Tasty and rich, but the bottoms were greasy from so much butter. I thought the caramel flavor was lost in the chocolate. Next time, I would lessen the butter, leave out the chocolate and probably add a bit more nuts. Also, I would use a smaller pan to get thicker bars.

Slow-Cooker Chicken Tortilla Soup

Excellent soup and easy to make. Like others, I used all chicken stock (no water), but it was very rich, so I might try it as written next time. I also put my chicken in raw, whole pieces, and then shredded it just before serving. I added some fresh lime juice and a handful of cilantro just before serving as well, and offered chopped avocado, sour cream and cheddar cheese as toppings. My boyfriend inhaled this and said he loved it! Will definitely make again. Thanks!

Pork Chops with Apple Curry Sauce

Excellent! Very tasty and easy to make. I only used 1 1/2 Tbl. curry powder since I was cooking for picky boys, and they loved it. I also used 1 cup apple juice and 1 cup chicken stock rather than 2 cups apple juice and the bouillon to reduce the salt. Came out great! Thanks for sharing!

Cajun Chicken Pasta

Excellent flavor and easy to make. I didn't have any cream or evaporated milk, so I just used regular whole milk. Was still fabulous even if not as creamy as might normally be. Will definitely make again. Thanks!

Microwave Oven Peanut Brittle

OMG this was so easy! I can't believe it. I've tried making nut brittle in the past using traditional stovetop recipes and it always came out burnt tasting and greasy. This recipe was quick, super easy and it's perfect - tastes just like expensive gourmet brittle from the store. I used pistachios rather than peanuts, but otherwise followed recipe exactly. Thanks, this is definitely a keeper!

Pumpkin Crunch Parfaits

When I made the filling and tasted it, it seemed a little bland, so I added in the rest of the can of pumpkin (15 oz can, I think) and another approx. 3/4 tsp pie spice, which kicked up where I expected the flavor to be. This is quite good, but very rich. I used what I thought of as small dessert dishes, but even so, it's more than I can eat in one sitting. Very good. Thanks!

This is a great recipe! Very easy, tasty, hearty and a true one-pot meal. Easy to customize too - switch up the type of condensed soup, or change out the vegetables, or even try it with pork! Definitely a keeper. Thanks!

Chicken a la Creme

This is an excellent, quick and easy recipe. I added about a tsp each of onion and garlic powder and the flavor was wonderful. I also added in some mushrooms to saute with the chicken and threw in some broccoli at the very end. Definitely not low fat, but very very tasty. Thanks!

Turkey Goulash

This was extremely easy to make - my boyfriend's son actually made it for us, with my help. Overall a good dish, but it does need a little extra flavor. We added some hot sauce, but next time I will add some paprika and see how that does. Quick, easy and hearty though, so will make this again. Thanks!

Chicken with Asparagus and Roasted Red Peppers

Excellent as well as very easy and quick to make. I didn't have any roasted red peppers, so I just used fresh and it was still excellent. Quick, easy, very tasty and healthy to boot - what more could you ask? Will definitely make this again! Edited to add: Have now made this with fresh peppers and roasted red peppers - no discernable difference in taste. Might as well use fresh - it's cheaper!

Excellent cookies. Very good flavor, moist and not dry like many spritz cookies are. I sprinkled with powdered sugar and they were gorgeous. Would be easy to sub lemon or lime flavors for the orange and they would be just as good. Definitely a keeper. Thanks!

Fig Bars II

These are pretty good, and a nice change of pace from the usual chocolate chip and oatmeal fare. I did not find that rolling them in confectioner's sugar did anything for the flavor, so I didn't do that after the first one. Very easy and quick to make, also. Thanks!

Crustless Cranberry Pie

Excellent! I doubled this recipe and made it in a 13x9 pan, which worked out fine. I also reduced the amount of cranberries, added in just a touch more sugar, and added a struesel topping so I would get a coffee cake type result. It was super yummy, moist and delicious! I got huge compliments from all my coworkers. Will definitely be a keeper. Thanks!
