I could not find any peppermint ice cream, so I used vanilla ice cream and added a few drops of peppermint extract while stirring. Couldn't tell the difference. Absolutely delicious. A big hit.

I was unable to find any fresh or frozen cranberries, so I used whole berry canned cranberry sauce as suggested by other reviewers. My guests looked at me a bit strangly when I told them what it was, but once they tasted it they were won over. The combination of the tart cranberry and cream cheese is really very tasty. This is a nice dish for something other than the usual.

Excellent recipe! Everyone loved it-I decided to use 1/2 whole cranberry sauce and 1/2 jellied and I had no problems at all with the consistency of the frosting..It was so good in fact we used the leftover frosting on some other things.
