Cake Mix Cookies VII
FRUIT CAKE COOKIES! I followed the recipe exactly. I used vanilla super-moist cake mix, and for my cup of 'goodies' I used candied fruit bits and chopped walnuts. I sprinkled them with green sugar crystals and they made the most delicious holiday cookies. Colorful, soft, sweet and oh so good!!!

Sweet Potato Cranberry Bake
I made this last year and my family really liked it! They requested I make it again this yr for thanksgiving. The balance of sweet and tart in this dish is what makes it a winner.

Fried Spinach
I think this is good way to get more veggies in at breakfast time. I used the fresh spinach I had on hand and soymilk instead of cow milk. Added a bit of garlic and salt for flavor. It came out great and I think cooking it for a while was key so it doesn't come out wet or mushy.
