Chocolate Chip Banana Muffins
used wheat flour added: 1/4 cup white sugar, 1t vanilla, 1/2 t cin, MINI chips, no topping, cover with foil while they are still warm and YUM! Spray your pan a LOT with butter flavored cooking spray and they will come out fine. My son has been eating these for breakfasy with a blueberry, banana, yogurt smoothie - yum! I also lowered the oven heat by 5 degrees and took them out before the posted time - just take them out when they look done!

Oatmeal Chocolate Chip Muffins
Okay, I ate THREE of these delicious muffins yesterday and had to stop myself from eating more! Only one so far today and plan to keep it that way. Anyway, READ the reviews first. I gave this recipe 4 stars because it definitely needed tweaking. I added 1t of vanilla, 1/2 t or so of cin, MINI choc chips and I lowered the heat by 5 degrees and cooked 5 mins less that what the recipe called for. )just keep an eye on them - all oven are different) Also, when they were almost cool, I covered the pan in FOIL and that "locked in the freshness". One thing I will do different is use whole milk instead of 2% - that was all I had and I would maybe add a large jar (stage 3?) of baby food - banana or apple sauce. It definitely needs moisture, but I did a pretty good job with what I changed and how I wrapped them up before they cooled off. My son has been enjoying these for breakfast with a blueberry/banana/yogurt smoothie - mmm mmm! Thanks for the great recipe! SOOOOO good with COFFEE!

Roasted Garlic Scalloped Potatoes
Yum! BUT only with some help! Instead of the thyme I used a few shakes on McCormick's MEXICAN SEASONING. I also used 2 cloves of garlic. Half cheddar and half pepperjack cheese. I probably used 4 cups total. Just eyeballed the cream. Oh! I also threw in a sprinkle of pepper flakes. Had a delicious kick and better color than the original recipe. Try it kicked up!
