Artichoke Dip

I have made this recipe for years (minus the green chiles). The key is to use Hellman's mayo ONLY and make sure you use well-drained and chopped artichole hearts in brine (not marinated). When done in this fashion, this is always the first appetizer to go. Much better warm- I prepare in a quiche dish serve on a warming tray with triscuits.

Hash Brown and Egg Casserole

As other reviews recommended, I doubled the eggs to 10, increased the milk, put in a 9 x 13 pan and reduced the amount of cheese. Used 1.5 lb bag of frozen hash brown potatoes with onion & peppers - still way too many potatoes. Will use half a bag next time. Flavor is very good.

Chicken Enchilada Casserole I

Followed directions to the letter, except I used five large flour tortillas (torn up) instead of the corn tortillas (family preference). Served with a salad and tortilla chips on the side (to dip in the cheesey sauce). My 17 year-old son and two of his friends loved it!

High Temperature Eye-of-Round Roast

This recipe is excellent. I have prepared prime rib in a similar manner, but did not realize it would work with a cheaper cut of meat. My family LOVED this! Season to taste- garlic, etc, as other have suggested. Leftovers are even better!

Beef Stroganoff III

Very good. I cheated a little. Had some leftover grilled sirloin steak. Sliced that up and shortened the cook time. No green onion so used sweet onion instead. Otherwise followed the basic instructions. Turned out well. Hubby had seconds, so I gave it a 5!

A and Z Dip

This is very good. Left out the olives as my family does not like them. Added 3 green onions and appx. 1 cup fresh pico de gallo, drained. Very good with tortilla chips and wheat thins.

Easy Spicy Chicken and Rice

Excellent recipe. As others, added can of chopped green chiles, sour cream and a soup can of chicken broth. Sprinled with shredded cheddar last 5 minutes of baking time. Super flavor.

Zesty Slow Cooker Chicken Barbecue

Tangy Slow Cooker Pork Roast

Followed the recipe to the letter and it was excellent. Pork roast is often dry -this was mosit and juicy. My 16 year old son who is usually not too fond of roast indicated that I need to make this dish more often. We are havng leftovers tonight, but thickened the juice with a little cornstarch to make more of a gravy to serve over rice.

Never Enough Green Bean Casserole

This was excellent. I used a jar of Old English cheese and the pre-cooked real bacon bits. Next time I will leave out the canned mushrooms though, as a personal preference.
