Jamie's Minestrone

Wow...this soup is soooo good. I sampled some after 40 minutes of simmering and it is fabulous. I can only imagine how wonderful it will be tomorrow! It is always better the next day! I too ommitted the water and used 4 cups of chicken broth. I did not use green beans but a can each of cannelini and garbanzo beans as well as the kidney beans. I also tossed in a can of diced potatoes. I used more vegetables than the recipe called for but I love hearty soup. I also used merlot wine (not cooking wine) and not only did my kitchen smell fabulous, the soup is wonderful. You really can add any veggies you like. I don't eat meat but my family does so I will be adding italian sausage to theres. I need not look any further for a good minestrone soup recipe.

Kay's Spaghetti and Lasagna Sauce

I made a double batch of this oh so easy recipe this evening. I don't eat meat (the only one in my family) so had my husband do the taste test. He added 2 tbsp of sugar and a little garlic salt and declared it perfect! He is one very picky man so Kay...ya done good! I will never buy jarred spaghetti again! Bless you!

Party Pinwheels

I doubled this recipe and used only 1 1/2 envelopes of the ranch dressing mix. The next time I think I will use only 1 envelope as it is a little salty. My husband was sneaking the cream cheese mixture so fast I had to rush to roll them so I would have enough! Word of caution, make sure you roll tightly. Mine are a little loose.

Seafood Enchiladas

The flavor was excellent. The sauce was a little runny so I will use cornstarch next time. I had no trouble with curdling. The only problem is that there are no leftovers!

Sweet Potato Pie VII

I followed the recipe to a "T"...snuck a bite of the filling and couldn't wait to try it cooked! My husband said this is the best sweet potato pie he has ever had and I have to agree. I baked two of these pies for a dinner we are having at our church for boys from a boys home...I bet the boys will feel as if they are having some of their mom's cooking. They won't be home for the holidays but my prayer is that they will feel like home came to them. Thank you.

Earth, Sea and Fire Salmon

I enjoyed this very much. I will add a touch of garlic the next time I maket it. I did not use sesame oil as I do not care for the taste of it. I used more olive oil and the flavor was lovely. Thank you...this recipe is a keeper!

Baked Ziti I

We have a family at church in need of a meal so I made one for them and another for my family. When my husband took the first bite he said "It passes...you can take it to the family at church!" My husband, son and very picky daughter loved it...suggested a little garlic salt. I don't eat red meat but look forward to making the meatless version as a side dish so that I can try it! This one is a keeper!

Buttermilk Pancakes II

My husband is exceptionally picky when it comes to pancakes and he enjoyed these very much. I tossed blueberries in...yum yum! We both agreed that next time I make these will will double up on the sugar. I cut the recipe in half and it made more than enough pancakes for my family of four. The kids will be thrilled to have leftovers!

Mexican Casserole

The taste in general is great but the casserole is dry despite adding more water. I think next time I will double the salsa as someone else suggested. Not my favorite but worth trying again with a little tweaking.

Ham and Mushroom Baked Eggs

Our family is divided on this recipe. I too thought it was starchy...the cheese sauce didn't do it for me at all. It would be easier and less time consuming to scramble eggs, mushrooms, ham and add cheese. I sprinkled my portion with cilantro...that helped a bit.

Shrimp and Asparagus

Absolutely wonderful...my entire family loved it even my very picky daughter. I think that following the recipe to a "T" makes well more than eight servings unless you are serving NFL players! No matter...it makes for great leftovers! I chopped the asparagus into 1" pieces before steaming...I believe it saved a few minutes of cooking time! This will be a family favorite for years!

The Best Sweet and Sour Meatballs

The flavor was OK...then I added some pineapple juice and got the flavor just right. Thickened it with cornstarch and my husband said he enjoyed the meatballs very much. I did use pre-made meatballs from Sams Club...makes for a very simple meal.

Chicken Florentine Casserole

The overall taste is good...I think the next time I will saute the mushrooms, cube the chicken, mix everything together and then top it with the cheese and bacon. The sauce is so yummy but the spinach tastes flat if you get a bite without the sauce. Mixing it all together and making a florentine casserole will suit our tastes I believe.
