Classic Spanish Sangria

I love this drink! It looks pretty in the pitcher, it tastes wonderful, and it's fun to serve! I used Tortuga spiced rum and Barefoot Merlot (they support Surfrider Foundation!). This was pretty strong- much better for a night at home than taking somewhere and driving afterwards. Today I only let the fruit soak in the rum for about 3 hours, but next time I will let it soak overnight to get a stronger effect.

Wave Your Flag Cake

This is a simple, light, delicious cake. It is perfect for a hot Fourth of July party! I made it last year and I am making it again this year because everyone loved it. People said it tasted fresh and summer-y, not overly sugary and weighed down like a regular cake would taste.

Beer Pancakes

I am from Wisconsin and have been eating pancakes my entire life. This recipe blows all those other pancakes away! I used Coors Light because it was in the fridge, and some real Wisconsin maple syrup. So light, so delicious! I will never make "sober" pancakes again!

Asian Lettuce Wraps

This was SO amazing! I followed the recipe exactly. For asian chili paste I used Sriracha Hot Chili Sauce. It went great with mini-pizzas, Kendall-Jackson Meritage, and a Lakers game!

Pork, Broccoli and Rice Casserole

This recipe was great! I'm lactose intolerant, so I used coconut milk instead of a cream soup. Fresh broccoli gave a great crunch. I added lots of curry and fresh ground black pepper. This was perfect for leftover pork loin, and was easy to make on a busy day! Definite repeat!

Oatmeal Pancake

I found this recipe because I was looking for a way to use up oatmeal. I used tofu because I'm lactose intolerant, mixed by hand, and used whole eggs instead of whites because I hate to waste the yellows. My first batch had two eggs and that made it very egg-y, like French Toast gone bad. My second batch had one egg and that made it very heavy because they were so thick. I think next time I will add some soymilk. The taste is very nutty and rich, which I really liked. This could pass for a fancy B&B breakfast with fresh fruit toppings.

Quick and Easy Chicken

The sauce will NOT cover the chicken unless you double the recipe. Several people have metioned this and really, it's important! I customizd the recipe to one serving and as expected, it took less time to cook as well. The onions carmelized...tasty!

Peanut Butter Noodles

It's just peanut butter and noodles, but the ginger and honey make it impressive. I served this for a co-worker and she said it was great, but would have added more spice to it. I thought it was fine, though!

Sugar Cookie Drops

Smooth and rich. It impressed my new boss. GREAT RECIPE! Edited to add: 8 months later, as I'm leaving my job, my co-workers mentioned these cookies as one of the memories of my year with them. They are THAT good!

Basic Crepes

Very easy to make, delicious! I used soymilk and margarine, and put sliced strawberries and powdered sugar on top. I also used this recipe to teach 40 Japanese high school seniors how to make crepes. The students loved it and their crepes turned out great! I changed my rating to 5 stars because this crepe recipe really is "the Best!".

Flourless Peanut Butter Cookies

I made these in a toaster oven, watching through the window to see when they looked "done". The first batch I made by dropped teaspoonful, and they didn't get cooked through all the way, so for the next batch I pressed each cookie down with a fork, which worked much better. These cookies got crunchy extremely fast. Good for a quick snack, maybe not for company.
