About this Cook
I'm a mom of 2 teenagers and work full-time so I don't have a lot of time to cook, but I am actually starting to *enjoy* it more than I ever have before thanks to AllRecipes.com!
My favorite things to cook
We love spicy foods in our family! Mexican and Cajun foods, especially. My mom was a wonderful southern country cook (with German and Czech influences), we lived for 7 years in S. Louisiana, and my husband's family is from Mexico...so we come by it naturally!
My cooking triumphs
I guess I was pretty happy that Christmas Eve I put a $100 beef tenderloin in the oven and didn't ruin it!! It was delicious and I was *very* relieved!
My cooking tragedies
Way too many to list here! ;-)

Chicken Chile Spaghetti
Made exactly as the recipe states and turned out delicious! My family gobbled it up. Next time I think I'll leave out the green pepper (not a big fan), use fresh sauteed mushrooms and add more garlic. Thanks for the recipe!

Sopapilla Cheesecake
This was a most excellent recipe! It's really good right out of the oven with some vanilla ice cream!! I think next time I'll use less sugar in the cream cheese mixture, though....it will be every bit as good, I'm sure.

Slow-Cooker Chicken Tortilla Soup
This is definitely a keeper! I used a qt of chicken broth, 3 large frozen chicken breasts and 2 cans of Rotel tomatoes. Cooked on high for 4 hours and it turned out PERFECT.
