Delicious Gluten-Free Pancakes

Excellent! Very similar to wheat pancakes. I used everything as called for, except the sweetener which I omitted and guar gum instead of the xanthum.

West Tennessee Corn Bread

Yum! Just made this for my family because my husband can't have gluten anymore. It was great. I used Smart Balance mayo because that's what we have. It was very light and fluffy and no more crumbly than an other corn bread I've made.

Whole Wheat Muffins

These are good as is (well I used all whole wheat pastry flour) but they only took 12 minutes in my oven-which is right on on temp. Maybe this is why they are so dry for some? They weren't dry for me but a little crumbly.

Best Ever Chocolate Chip Cookies I

Great cookies. I had to use powder sugar instead of brown because I was out and they are still wonderful. Be careful if you roll them because they roll off the sheet.

Alternative Baked Salmon

My husband doesn't like salmon, but he loves to fish and being in Alaska brings home some great salmon. This recipe makes him want to eat his catch--it was fabulous!

Raisin Lemon Cookies

Awesome! My husband said "that's how a cookie should be-flavorful and sweet and salty and crunchy and chewy". This is my second time making them. The first I used butter because I didnt have the no trans fat shorting. This time I followed the recipe except I left out the raisons and added an extra cup of oatmeal. So good (my husband doesn't like raisins, but I liked them that way too)
