Holiday Peppermint Bark

Used my food processor to chop up candy canes (pulse). My only complaint is that I wish I would have made them a little thicker. I tried to spread the entire batter out over the baking sheet.

Easy OREO Truffles

These are sooo good. I dipped them in chocolate and white chocolate and put them in a tin to give as gifts for Christmas. Just remember to keep these refrigerated as they do not keep well left out due to the cream cheese. This is my 2nd year making these to give as gifts and they are such a hit. You will look like a star! Insanely easy too!

Spaghetti Carbonara II

This is good, nothing spectacular. I was hesitant to make this because I couldn't get past the fact that it contains raw eggs. Added peas, sun dried tomatoes, and mushrooms to the dish to add more flavor.

Easy Decadent Truffles

Made truffles EXACTLY as written the 1st time and found them to be sickening sweet, and this is coming from a sugar fan! They did however, look beautiful and rolled nicely without refrigerating. The 2nd time I made them I used 2C sugar, and 2C chocolate chips as another reviewer suggested. These tasted much better, but they look horrible. They are difficult to roll even after leaving in the fridge for an hour. I am still giving these as Christmas gifts this year, but you can be sure that I won't be making these again- EVER!

Tasty Lentil Tacos

With all the fantastic reviews on this I was really hoping to replace one of our week night staples with a meat-free entree. The lentils were not soft and chewy, and I definitely like making my turkey tacos better!

Bacon Wrapped Smokies

No need to use toothpicks, just wrap the bacon tightly around the smokie and you are good to go. I added 1C. brown sugar and they tasted delicious. I did have to place them under the broiler to crisp up the bacon b/c the bacon was still raw after 40 minutes in the oven. Been getting emails all week for this recipe!

Chocolate Cakes with Liquid Centers

I forgot about this recipe until I was faced with an impromptu dinner this evening and needed a quick dessert. Beautiful, elegant, simple, and DELISH! Used semi-sweet instead of bitter-sweet chocolate b/c it's what I had on hand.

Portobello Penne Pasta Casserole

Very good and very rich even with low-fat options. *Used low-fat Smart Balance butter, skim milk, and 2% mozarella cheese to make a little healthier. *Added sun dried tomatoes and parmesan cheese which was a GREAT addition. *Definitely sauteed the mushrooms for more than 1 min though, more like 10-15 and also baked for more like 30 mins. ***Tip: use your egg slicer to cut up all the mushrooms to save time chopping***

Seven Layer Tortilla Pie

Make this easier on yourself and use refried beans instead of mashing up pinto beans. Also, I added black bean and corn salsa which was a nice addition. This is one of those recipes that you can throw in whatever else you would like and it will still turn out great (peppers, onions, avocado, etc). Fantastic!

Homemade Black Bean Veggie Burgers

If you like black beans then you'll love these burgers. My only complaint is that they don't stick together very well. I even added an extra egg and chilled them in the fridge for a few hours before grilling. Next time I'll stick them in the freezer.

Marbled Pumpkin Cheesecake

I read all the reviews before making this and it turned out to be the best cheesecake ever! Made the batter first, adding 1tsp of nutmeg, and 1tsp of cinnamon for more flavor and then put the batter in the fridge while the crust baked. This helped with the marbling. Also, I only used 1/2C of white batter instead of a full cup. That seemed to be too much to get a pretty marbling. Made for my mom's birthday and everyone raved and said I should bring this instead of pumpkin pie to Thanksgiving this year!

Roast Pumpkin and Feta Risotto

I didn't find this to be all that tasty. The time it took was not really worth the result. I served this at a big family meal and people liked it, but didn't LOVE it....so if you just want something different then try it, but don't expect it to be out of this world.

Sesame Green Beans

I make this side dish all the time, as it is the only type of green beans my husband likes. However, instead of salt and chicken broth I use a couple of dashes of soy sauce. It gives it a nice flavor!

Marinated Grilled Shrimp

Turned out wonderful. I liked the hint of spicyness from the cayenne, not too overpowering. Also, I forgot to add the basil and it still turned out great. Would serve this to dinner guests.
