About this Cook
I am a SAHM with a beautiful baby boy, 2 wild & crazy jack russell terriers, and a wonderful husband who is also my best friend. I love cooking and baking. It's a great way for me to relax and be creative. In my spare time I love the water so I'm always at a pool, or on the lake. I also enjoy yoga and pilates and need to do more of it to get rid of this baby weight!!

Every Christmas/Thanksgiving I am in charge of baking the cookies, pies, candies etc. I make a HUGE mess but I love every minute of it!

Chocolate Cakes with Liquid Centers
I forgot about this recipe until I was faced with an impromptu dinner this evening and needed a quick dessert. Beautiful, elegant, simple, and DELISH! Used semi-sweet instead of bitter-sweet chocolate b/c it's what I had on hand.

Portobello Penne Pasta Casserole
Very good and very rich even with low-fat options. *Used low-fat Smart Balance butter, skim milk, and 2% mozarella cheese to make a little healthier. *Added sun dried tomatoes and parmesan cheese which was a GREAT addition. *Definitely sauteed the mushrooms for more than 1 min though, more like 10-15 and also baked for more like 30 mins. ***Tip: use your egg slicer to cut up all the mushrooms to save time chopping***

Stuffed Peppers My Way
Very good. Even my "meat eating" husband was satisfied with this as an entree. I used brown rice to cut down on cost, and spinach instead of basil.
