Classic Goulash

Reviewed: Dec. 7, 2011
Very good. Didn't have soy sauce or italian seasoning so used worchestershire (per another reviewer's advice) and about 1 1/2 cups bloody mary mix to supplement the fact i used homemade canned tomatoes and no tomato sauce. Cooked pasta separately so didn't add the water. my 16 month old devoured it!

Mom's Macaroni and Cheese

Reviewed: Dec. 7, 2011
Had to beef this up to make it the main dish, added steamed broccoli and sweet smoked bacon crumbles served with green salad on the side. Following some of the reviewers' advice, I added a tbs extra butter to the roux and whisked briskly throughout the milk adding and boiling process. Used 4oz velveeta cubed and 1 cup sharp cheddar, no breadcrumbs for my fam so just grated more cheese on top. Baked covered at 350 for about 30 minutes. Absolutely fabulous! I took spoonfuls of the cold mac the next day, rolled them in flour and fried the flattened patties in a little veggie oil and served with warm horseradish for me and applesauce for my 16mo, very tasty~!

Honey Chicken Stir-Fry

Awesome and easy! Perfect, had dinner on table in 30 minutes and still had time to play with the kid while cooking as you don't have to stand right over the skillet the whole time. Recipe is going into my rotation for sure.

Chicken Parmigiana

Reviewed: Nov. 16, 2011
Firstly I made my own sauce from garden canned tomatoes with 3 gloves garlic, fresh minced basil and oregano and half a small sweet onion minced in EV olive oil. Drain juice from canned tomatoes and add to pan, boil 5 minutes then reduce heat to simmer uncovered 1-3 hours, stirring every so often. I doubled recipe to use 4 breasts that I cut into 3 fat strips each. I coat my chicken in flour first then egg then italian seasoned breadcrumbs/parmesan cheese mixture. Used parmesan slices as what I had on hand. Super tasty recipe. Great potential to play :)

Garlic Cheddar Chicken

Reviewed: Oct. 9, 2011
Wow super tasty and pretty darn easy! I also used half the butter and a liberal splash of Extra Virgin Olive Oil. Used 4 tb fresh minced garlic and an additional 3 tsp garlic powder. Didn't do the dried herbs at all, just let the cheese and garlic stand on their own. I also sprinkled breadcrumbs in a thin layer in my baking dish and added chicken on top as another reviewer mentioned, breadcrumbs moist but not soggy. My 14mo devoured hers and asked for more, fiance taking the leftovers to work to eat cold. :) Def a keeper with endless possibilities.

Very good and I'm not a fan of squash much. Used chix broth and half the cream cheese, added a swirl of sour cream right before serving, delish! Had ham and cheese pretzel bread bagel sandwiches with, perfect for dipping!

Made these for my baby shower, Huge Hit! I prepped the meat, onions & pickle the night before, assembled and baked in the morning. The 1st appetizer to be completely gone! Did some with onions, some without, left mustard out, served it onside. Fabulous! The kids loved them!

Hot Spinach Red Pepper Dip

Reviewed: Nov. 16, 2009
OMG! This dip is fantastic! I sliced one red pepper and 3 gloves of garlic very thin and roasted in the oven with maybe a tablespoon of olive oil and a teaspoon of Italian seasoning. Mixed in the spinach/pepper with the diced roasted peppers and garlic. Used Parmesan/Romano blend cheese and doubled the cheese. SO GOOD!

Bob's Stuffed Banana Peppers

Reviewed: Nov. 11, 2009
Pretty darn good! I used this recipe as a starting point: I stuffed Banana & Hungarian Hot Wax peppers with a mixture of raw minced onions, breadcrumbs, cream cheese, 2 cloves minced garlic and italian seasonings. Half a jar of spaghetti sauce in the pan and the remaining over top of the peppers, a little sprinkle of mozzarella and FABULOUS!
