Easy Spiced Brown Rice With Corn

Good basic recipe. I used garlic spiced chicken broth, added peas and corn and a can of fire roasted tomatoes. Because of the extra liquid, I used 1/4 cup more of the rice. Cumin, oregano, onion and pepper. Nice side dish.

Sloppy Joes II

Great recipe! I added 1 tbsp worchestershire sauce and reduced the sugar to just 1/2 tbsp white sugar. Great and easy! Kids ate it with onions and bell pepper because I diced them very small and they couldn't see them!

Italian Peas

I used 1/2 of an onion, very finely chopped and it was plenty. Good recipe. Definately use frozen peas, not canned.

Eggplant Tomato Bake

I had a small to medium sized eggplant and was looking for ideas. This was it! I peeled the eggplant to get the kids to eat it. I would like to try it with the peel on. I sprayed the eggplant pieces with a little olive oil and used dried basil and salt and pepper(can't wait to try with a fresh basil leaf). I topped each eggplant with a bit of parmesan, placed tomato slice on top with a little bit of salt and baked for 15 minutes. I then put on a thin slice of fresh mozzarella and put under the broiler to toast. It was fantastic! At first I told the kids it was potatoes and they loved it! Then they asked what was the green part, so confessed. A definate addition to the family table.

Turtle Cake I

I make this for friends at work and it is always a hit. I also cut the butter to 1/2 cup. I have made it with walnuts and pecans and both turn out well. Once I added some Heath toffee pieces and that was a hit too. I dust the top with a little powdered sugar to put a finished look on it.

Asparagus, Feta and Couscous Salad

I used some roasted asparagus I had left over and it really made this recipe. Try with grilled or roasted asparagus for a fabulous variation.

Absolutely Fabulous Greek/House Dressing

Fabulous dressing! Very vinegary, but I like that. I used it on the Greek Couscous Salad for a crowd from this site. I scaled it down to 15 and it made alot.

Parmesan Zucchini Spears

We do this all the time in the summer. Buy the smaller zucchini and cut each into 4 wedges. A little olive oil, salt, pepper and Italian seasonings. Voila! Sprinkle with the cheese when done. Also good drizzled with Balsamic Vinegar after removed from the grill.

Crawfish and Corn Soup

We loved this soup! I used the crawfish from our boil that I had frozen and it was perfect! It added another layer of flavor. I used regular corn without added sugar and semi pureed it instead of the cream style corn. As suggested, I added a couple of caps of Zatarain's liquid boil and it was fabulous. I think I will try this with shrimp.

Mexican Shrimp Cocktail

We loved this. Pretty close to what a favorite restaurant makes. I cut out the horseradish and added jalapenos. I also added tomato paste to thicken it up, lemon rind and Zataranis liquid shrimp boil for a kick. Wonderful! Thanks for the recipe!

Three-Cheese Rice Lasagna

I really liked this recipe, but I did not make the diet version. I used cooked brown rice, homemade spaghetti sauce with sausages, a whole egg, and ricotta and mozarella cheese instead of cottage cheese. I baked mine in the oven like lasagna and topped it with lots of freshly grated parmesan cheese in the last 10 minutes. I was looking for something to do with my brown rice and I thank you for the inspiration of this dish! ;}

I reduced the broth down by about 1/3 before adding everything else - I used low sodium chicken broth. Then top with a little fresh lemon juice at the end.

Salmon Fillets with Creamy Dill

This is a great recipe. I made it the first time as written (with less sauce) and have made it a couple of times changing things up a little. Today I made it with 1/2 cup mayo, 2 - 3 tbsp dijon mustard and added garlic and onions to the other herbs listed but no dill (didn't have any more). And it was delicious. Thanks for the recipe!

These are wonderful! I like that they are not really sweet. I put lots of powdered sugar on them and they are still not too sweet. I made them as a gift but they may not last long enough to give away!!

Elvis Presley Cake

I have made this cake a couple of times for work and always get asked for the recipe. It is really so simple!! I use two cans of pineapple but only the juice from one. I used the yellow cake mix with pudding. I also poke holes in the cooled cake with a toothpick before spooning the pineapple topping on. Yummy!!

Mom's Stovetop Pork Ribs

This was great! I just made it with country style pork ribs. I was looking for a simple recipe that didn't take all day to cook. I used lite soy sauce and reduced the amount as suggested and mine are perfectly seasoned, the cilantro makes it I think.. However, it did take almost 2 hours for all the water to evaporate. Edited: Use the largest (widest) pan you can find to facilitate the evaporation and cook at just a simmering boil. You want the longer cooking time to make them tender. And just as others said, watch it closely when it gets 1/2 because it finishes fast.
