Crustless Spinach Quiche
Great starter recipe. I love the fact that it is crustless. I use 16 oz of Egg Beaters, whatever cheese we have on hand (although I have never used 3 cups!) and sometimes add meat or not. It's great with sun dried tomatoes and roasted red bell peppers, heck whatever veggies you have on hand.

Crispy Oven-Fried Fish Fillets
I used Catfish fillets and cut them in half. NO WAY they were cooked in 10 minutes. Pulled them out, put right back in for another 8 minutes. Taste was good, instruction off if you have anything but a super thin cut of fish.

Asian Lettuce Wraps
I liked the sauce on the meat, but I prefer my water chestnuts and veggies crispy and separate to top with, not mixed in with the meat.
