Creamy Carrot Soup
I loved this soup as well. My modifications were using veggy broth, some garlic, 1/2 and 1/2 and whole milk and at the end when all was blended and re-simmering, I added some white wine and a bit of italian cheese! Very very good, light and healthy tasting. Thanks for the great use for the carrots from our garden!
