White Chocolate Fruit Tart
This was very simple and elegant. I made the crust as the recipe is written, however I did half whole wheat flour and half white flour and I added half a cup of whole pecans. I put all the ingredients in my food processor and pulsed until blended. The crust came together in about 3 minutes like this! I love being able to do different toppings depending on the season. I love the glaze on top as well. It preserves the fruit and gives the tart the perfect amount of polish.

Sweet and Sour Chicken III
Really yummy! I used 3 lbs of chicken and tripled the sauce and had plenty. The sauce is also so flavorful that a little went a long way. I cubed the chicken and seasoned with kosher salt, pepper, a dash of cayenne pepper, garlic powder and some fresh garlic and let it sit in a ziploc bag while I prepped the remaining ingredients. I then assembled the sauce in a bowl to allow the cornstarch to start to thicken. I used a 20oz can of pineapple in heavy syrup. I pulsed it a few times in the food processer so that it was smaller pieces of pineapple. I sauteed the chicken with only a small amount of oil and when almost finished, I added the veggies. I used carrots and zuccini in matchsticks, a red pepper and a vidalia onion. The sauce was added last and it thickened up VERY quickly. What a thick flavorful sauce! I think peanuts as a garnish or water chestnuts would add a nice crunch. I'll try that next time. :-)

Peanut Butter Cup Cookies
These are so yummy! I was craving peanut butter cookies and made these for my Superbowl party. I highly recommend freezing your peanut butter cups first. I took them from the freezer and squished them right into the hot-out-of-the-oven cookie and then put the whole tray in the fridge for about 15 minutes to set them. Definitely don't go over 8 minutes. Also, I doubled this recipe and made almost 90. I think my first tray was on the small side though. I wasn't sure what to expect. Because it made so many, I ran out of peanut butter cups. I had some Reese's peanut butter hearts for Valentine's though! I unwrapped those and squished them in my last tray of cookies. They are so cute! A definite must if you are making these for Valentine's Day :-)
