Yakitori Don

Very good - I added sesame oil and a lot more Sake, and less soy sauce as I felt 2/3 a cup would have been way too salty. We did not have Mirin so I added Oishi sauce and served with sticky white rice and zucchini sticks with onion sauteed in ginger and soy sauce. Really tasty meal thanks.

Hash Brown Casserole II

Reviewed: May 6, 2007
Was craving some comfort food so made this - very tasty. It wasn't too much onion for us at all. For easy one pot preparation - melt all the butter you need then take some out to mix with corn flakes later. Sautee the onions in remaining butter then add all ingredients and put in casserole dish. Voila! Added a bit of garlic powder and put paprika on top of the corn flakes for a nice presentation. Did add half the butter called for, and used cream of wild mushroom soup.

Glazed Apple Cookies

Reviewed: May 6, 2007
Absolutely amazing. For once I did not change a thing except to bake at 375 for 8-9 minutes (first batch had to be thrown out at 400 degrees and 10 minutes the bottoms were black). The only think I may do in the future is add 1 extra cup of apples. These are incredible. Soft, chewy and full of flavour.

Cream Cheese Sugar Cookies

Reviewed: Mar. 27, 2007
I have made these several times and they are so wonderful and flavorful - they are the best sugar cookie recipe I have found. I add 1 tsp each vanilla and almond extract. If you find your dough too runny you didn't add enough flour just adjust. I find 2 1/4 to be perfect. I use Nutri-flour it is a great way to sneak a little health into the little one's treats. I teach children and hand these out the final day of class. I cut these into letter shapes and frost with white icing then let the kids take turns speed drawing on them with edible food markers (1 minute) it is great fun for everyone :)

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jan. 30, 2007
Really good I will use again but will add more vanilla and only 1 1/2 cups chips this was still a ton. I recommend flattening them a bit before you bake them. Using 1/4 cup scoop this recipe only made 12 cookies for me. But boy there were huge!

Truck-Stop Buttermilk Pancakes

Reviewed: Jan. 26, 2007
I was skeptical of this recipe as there was so much baking powder and baking soda but I gave it a shot and I am so impressed. Thick yet light, fluffy and flavorful pancakes. The only thing I recommend changing is adding vanilla. Great recipe.

Clone of a Cinnabon

Reviewed: Jan. 5, 2007
Really good but to truly be like Cinnabon they need to be higher and fluffier. I make them with my Kitchen Aid mixer: I add 2 yeast packets and heat the milk to about 80 degrees. I preheat my bowl so it is warm as well, then let the yeast proof. I leave in a warm oven (turned it on then off quickly). I mix the butter and cinnamon and sugar together then spread it out - using double what the recipe says. Be sure to not overcook! Ice while hot being generous.

I never liked this type of cookie until now. Perfect EXCEPT that I do recommend doubling the cinnamon/sugar you roll the cookie in. As other reviewers said be sure to only bake 8 minutes.

Calzone Rolls

Reviewed: Jan. 5, 2007
Very good basic recipe. My boyfriend calls these PizzaBons as they kind of look like Cinnabons! I don't have a bread machine so I proofed the yeast in my Kitchen Aid mixer then added the shortening, and then the milk, salt and flour. The dough was a bit stiff so I had to finish up by hand though (just 2 minutes kneading). I added crushed garlic and dried basil and an Italian herb blend to the sauteed veggies. I omitted the green peppers as we don't like them. The dough rose perfectly and was so easy to work with I didn't even need flour to roll out, but was a bit bland - and 1/4 tsp more salt next time, and add herbs to the dough itself as well. I recommend doubling the veggies, sauce, meat and cheese - the amount given only covered one batch.

Rita's Eggs Strata

Reviewed: Dec. 23, 2006
This had a good flavor but needed work so I am giving it 3 stars. I recommend more butter, using french bread, and putting a cover on until the last 15 minutes so that the cheese doesn't burn. You will need more than 1 hour to cook this. I also recommend adding meats or vegetables like ham, sauteed spinach or mushrooms that have been pressed to remove water. The savoury flavor is a 5 though.

Chewy Brownie Cookies

Reviewed: Dec. 19, 2006
This are wonderful! Be warned - the batter is not firm like the typical drop cookie dough. I was tempted to add more flour and I am glad I didn't they turn out just fine. They are crisp on the outside, and chewy on the inside. I omitted nuts and used white chocolate swirl chips instead. Be sure to save an extra half cup of chips to arrange on top of the cookie before you cook - otherwide no one will see the swirls.

Russian Tea Cakes I

Reviewed: Dec. 8, 2006
These are just fantastic. But wow for once I do not agree with the most helpful rated review. I did not care for the cookie rolled in sugar at all. I used both pecans and walnuts and liked the walnut better - the slight bitter taste of the nut was a perfect complement to the powdered sugar of the cookie. I ground the walnuts in my coffee grinder. I used a bit less flour (3 TBS less) than recommended for my second batch and that turned out better. Note that batter will be crumbly but when you roll it into a ball in your hand it will come together - just squeeze a bit! Also, when I rolled warm cookies in the powdered sugar they didn't even need a second roll! (warm and being able to hold in your hand without feeling YOW!, not hot or the powdered sugar will melt). Although I prefer walnut the most, this cookie is great with any kind of nut or flavoring - even pistachio. Roll in cinnamon and powdered sugar for something different.

Spumoni Slices

Reviewed: Dec. 4, 2006
The problem with this recipe is that there is no way I could spread the dough out to the size they said - it ended up being so thin that the cookies were like long short strips - not like the picture at all. The flavor was surprisingly bland as well and the different flavours of the different dough are not noticeable. Still, these are festive looking as well as great tasting - I added pistachios instead of pecans to the green dough before assembling.

Norwegian Pancakes - Pannekaken

Reviewed: Nov. 26, 2006
Very good but needed 1 more egg to give it that slightly "rubbery" crepe texture and great taste. Added vanilla and a pinch of cinnamon. I melted butter added lemon, put in a tablespoon per crepe then sprinkled powdered sugar. Incredible. Be sure to cook with Pam not butter for best consistency and appearance.

Very good but too sweet especially with the juice (I used OJ) - I recommend using 1/4 cup brown sugar and then later 1/4 cup white. Must add vanilla and cinnamon! For a treat add 1/4 cup dried cranberries. So good.
