Chocolate Chocolate Chip Cookies II

These did not do it for me. I was excited with all the great reviews. They tasted okay - nothing special. I have made so much better, but I'm always looking for easier/tastier. I'm a seasoned baker and maybe it just did not work because I doubled the recipe. I used softened butter but still the cookies flowed too much on the ungreased cookie sheet. So, I tried parchment, still did not work. I refrigerated the dough overnight and tried the same the next day with similar results. I even tried different temps and times. I finally plopped double the amount into muffin cups baked for 20 min at 350 and it turned out like molten chocolate cakes.

Avocado Watermelon Spinach Salad

Once I found the perfect watermelon I decided to try the recipe. I was skeptical at first, but holy moley it was delicious (my final recipe). I have made this salad several times. I made as is first time and it was pretty good. Then I read reviews and added the feta which brings in the next level of complexity with the sweet of the watermelon and the salty of the feta. I finalized with arugula (gives it the bitter bite), perfect melon, feta, homemade vinaigrette and sliced and fanned the avocado for presentation. Soooo, good and refreshing, especially for Phoenix.

Asian Salad with Beef and Avocado

Decent salad. I used blanched sugar snap peas in place of the snow peas. Had great ingredients and potential. It was just missing something. Dressing was a little bland. Might reduce the sugar, use a different vinegar or add fresh lemon juice, add minced garlic and maybe a dash of chili oil in the dressing. I may also spice up the steak more before grilling.

Chicken Pot Pie IX

I used the basics of this recipe and doctored it a bit and it was delicious! I poached my chicken breasts whole. I used the liquid to cook the carrots and celery. I used the liquid for the chicken broth, too. I did not cook the peas and just defrosted so they would not be mushy. I added minced garlic near the end of the cook time for the onions. I like mushrooms and sauteed sliced ones for the filling. I added some dried thyme and tarragon to the liquid. I blind baked 6 individual pot pies bases, filled and covered with top crusts. I baked 4 and froze 2. Definitely some work, but smells great baking and tastes sooo good.

Brunch Enchiladas

This was really good. I was lazy and did not start the night before and it still turned out good. I'll try it correctly the next time and re-review if it yields better results. I subbed cooked spicy turkey sausage for the ham and blanched asparagus for the peppers. I made sure to make enough liquid to cover the enchiladas. They floated after pouring the liquid mixture. I just place a baking dish over it for 1/2 hour to get everything to soak and popped it in the oven. I was a little loose due to not letting it sit overnight but still tasted great. Will make again. This recipe offers many options for substitution and would probably still taste yummy.

Ceviche Self-Portrait

Excellent! I add a couple more limes to cover and added 1/3 cup chopped cilantro. Sometimes the time varies a little depending on the amount of limes and the temperature of the fridge. One time I used my friend's fridge and it took 4 hours but that was because her fridge was set at almosts freezing (her milk was icy).

Hearts of Palm Dip

Holy smokes good! I added a clove of minced garlic. I could not stop eating it, but eventually it gets too rich and I had to stop. Yum. I have made the at least a dozen times with rave reviews.
