Caramel Shortbread Squares
YUM! I burned my first batch of caramel, but the second (cooked much more slowly) turned out great. I used semi-sweet chips, and melted them slowly using the microwave. The caramel was cool by the time I added the chocolate, and somehow they swirled together to look beautiful!

Tangy Cereal-Coated Chicken
I loved this dish! I added more crumbs on top of the chicken prior to broiling, because the original coating didn't stick very well. I would also recommend bringing the marmalade to room temperature, or microwaving it--easier to spread that way.

Creamy Oriental Dressing
I used 1/2 cup mayo, and 1/2 cup sour cream. You also don't have to use a blender to mix the ingredients; a mixing bowl and a sturdy arm should do the trick!
