I love making this 3 layer homemade (no mix!) Italian cream cake. It's from an old church cookbook and is great!
My cooking tragedies
Learning to bake at high altitude has been a challenge for me. I just know to try out a cake recipe ahead of time and also to have a backup plan just in case. (getting a dessert at Costco at the last minute!)

Quick Cheeseburger Pie
SO easy and fast! I used a store-bought crust and then used sweet pickle relish vs. the dill pickle juice and pickles. I couldn't find the swiss cheese so used cheddar cheese and it was great. We set mayo, mustard and ketchup on the table and the whole family got to make their cheeseburger pie complete! My son had 3 helpings! Now I want to try the Mexican version!

Easy Decadent Truffles
Some people said this tasted like frosting but I disagree. When coated in white or dark chocolate it tasted like one great truffle! I made them for a party and everyone went on and on about them! I did a mixture--some were coated in coconut flakes, some in white chocolate, some in dark chocolate and some in caramel! I also added some toffee chips to the tops of some. I've made this recipe twice already! I love it!

Salsa Chicken Rice Casserole
My family LOVED this recipe, including my 4 year old daughter and 7 year old son. My son had 3 helpings! The kids even ate their veggies, as they were able to mix them in with the casserole. My husband and I put some jalapenos on top to spice things up a bit!
