Tofu Creamed Spinach

I thought this was really bland and just not delicious. I added olive oil, walnuts and a pinch of nutmeg to try to give it more flavor, but even that didn't save it.

Apple Bars

This was good, but a little bland and sweet. I used 3/4 nuts and 1 1/2 c. apples. Next time I will add some nutmeg and use 3/4 c. sugar using brown sugar for more flavor.

I made a lower fat version using low fat cheeses and 1/2 the Jack called for and added salsa and green chilis rather than enchilada sauce and it was still boring.

Asian Roll Lettuce Wrap

I wasn't in a mood to be fussy and make meatballs, so I fried ground chicken mixture in peanut oil till done, added 2 c. leftover rice and heated. Then added ground vegetables to heat just a bit. I served this over shredded lettuce and made the dipping sauce into a salad dressing by adding peanut oil, a tad more sugar and substituted rice vinegar for the lemon juice. Lemon juice just didn't sound right for Asian food! It made a nice Asian salad. Great recipe.

Pork Chops with Cherry Sauce

This was pretty good, but not as good as I thought it would be. The only change I made was to use less broth. If I tried it again, I couldn't taste the orange and would alter this next time. It would be good on chicken too.

Cornmeal Cookies III

I used 1 T of lime extract in the cookie as the dough didn't taste like lime at all. I didn't have lime peel, so just used lime juice. Don't do it! My cookies hardly had any lime taste at all. I thought the cookies were too sweet. One T of lime juice to the confectioners sugar amount was way too runny. I don't like to select stars when I didn't follow a recipe exactly, but can't get around it.

Pennsylvania Dutch Pickled Beets and Eggs

I used beets only and everyone who ate them liked them. I will use a different vinegar, or mix, next time to see if I can get a little less of a jolt from the vinegar.

Too sweet and too much sauce. Too little broccoli. Flour makes the sauce look cloudy, try cornstarch instead, but not as much!

Five Spice Muffins

The spice flavor is great, but they are way too sweet. If you like store bought muffins, which should be called cupcakes, then use all the sugar. I'm going to add the spices to a more healthy whole grain muffin recipe.

Chicken Soup I

When I tated the soup after following the recipe it was only 3 stars. After a bit of enhancement it was 5 star. I added a couple of teaspoons of chicken base and added soup pasta. The broth was wonderful! I will use this recipe from now on and add soup base, pasta and chopped vegetables for more flavor and interest.

Mashed Turnips with Caraway

I do not like to have to choose a rating when I change a recipe, but am forced to do so! Due to the fat content, I made changes and used low fat sour cream and margarine. It tasted pretty good. Caraway is an interesting combo with turnip.

Greek Pasta Salad I

I cut the vinegar to 1/3 cup and since I didn't have mushrooms and I like more pasta in my pasta salad used 5 cups whole grain pasta. I rated the recipe based on the 1/2 cup of vinegar which would have been too much, in my opinion.

Overnight Caramel Pecan Rolls

Very good! Everyone at the breakfast raved about these. I doubled the caramel pecan topping as many suggested, but it was too much sweet goo for me. I will double the pecans, but not the rest of the topping next time.
