Coconut Chocolate Chip Cookies
I was snowed in and only had vanilla extract. Otherwise, I followed the recipe exactly. The cookies were good, but I didn't taste any coconut. I guess the extract makes the coconuttiness?

Pineapple Layer Cake
I made this for my boyfriend's birthday and he loved it. It was really easy and delicious!

Classic Bran Muffins
These were the best bran muffins I've ever made! I was a little short on the brown sugar so I threw in some honey. I also used craisins--yum! These muffins were so moist and delicious!
