Stuffed Shells IV

Excellent and so healthy! I used fresh blanched spinach, instead of frozen, and I used low-fat ricotta cheese instead of cottage cheese. Still came out quite nicely. It was a little labor-intensive so I wouldn't recommend this for easy weeknight cooking but definitely good for the weekend!

Butternut Squash Soup

This was delicious! For me, the hardest part was peeling and chopping the squash but once that was done, the rest was a cinch. I didn't use nearly as much cream cheese as was written; I only used 2/3 of one bar and the full flavor of the squash came through while still being creamy.

Chuck's Favorite Mac and Cheese

I have attempted various forms of mac and cheese for years and was unable to get it right. This recipe was so simple and yet it came out truly delicious. For this first time, I followed the directions exactly. Next time, I will try to add some meat and/or veggies to make it well-rounded. Thank you!

Savory Spinach Pie

Tasty and simple to make. I used low-fat cottage cheese and taste and consistency was not compromised. I added mushrooms which complemented the spinach well. I might experiment with different seasonings but by itself, it worked quite nicely.

Chicken Pot Pie IX

This was simply delicious. The key is to use fresh vegetables. I couldn't believe how easy this was to make. I used refrigerated Pillsbury pie crusts and they worked fine. I used thyme instead of celery seed and added some diced potatoes. Thanks!

Portobello Mushroom Stroganoff

Rosemary Turkey Meatloaf

Easy and tasty to make for a weekday meal. Good for kids as well. Next time, I'm going to follow another reviewer's advice and saute the onions a little first before adding to the mix. Onions were a bit too crunchy otherwise.

Very tasty and easy to make. I just made one change; instead of using bouillon cubes and water, I used 4 cups of low-sodium beef broth. Still worked!

Pasta, Broccoli and Chicken

Definitely tasty and a great way to incorporate veg, meat and starch all in one dish. I took advice from other reviewers and doubled the amount of pesto required. I also stir-fried raw chicken together with the pesto and vegetables. A good start to a great recipe.

Very tasty and easy to make. It was a little too salty (that's without adding the salt as the recipe states). I will try to thin it out in the future and maybe add less of the onion soup mix.

Braised Balsamic Chicken

Easy to make and quick to fix for any weeknight dinner. I agreed with everyone else and didn't put as much balsamic vinegar; I used only a 1/4 cup and even that gave it a strong flavor. I used with skinless chicken thighs and worked just as well.

Pineapple Cranberry Chicken

The pineapple and cranberry blended well together but all in all, the chicken still came out quite dry. Maybe using dark meat, perhaps? Some revisions to the recipe need to be made to improve the dish.
