BBQ Glazed Homemade Meatballs

Scaled the recipe to accommadate 18 servings, and served these as main course for a bit of a non-traditional easter meal. Not only were they fun to eat, they were delicious and went nicely with coleslaw, pasta salad and deviled eggs. Everyone loved them.

Cocktail Meatballs

This was perfect for our New Years Eve party. I am definitely making these again. I didn't have time to make homemade meatballs so I picked up a bag of 80-count Homestyle Meatballs from Walmart. Other than that, I followed the sauce recipe to the "T" - THEY WERE WONDERFUL!!! THANKS!

Sugar Cookie Icing

This icing smells as wonderful as its tastes. One minor problem mixing this together: 2 teaspoons milk and corn syrup was not near enough to make even a paste... it was more like a big lumpy pile, so I adjusted the recipe to tablespoon measurements and got the workable consistency I was looking for. I used this icing on Sugar Cookies V from this site and my cookies turned out to be the best I have ever had.

Soft Sugar Cookies V

Beautiful cookies! After years of searching, finally a cut-out sugar cookie recipe I'm keeping. My cookie dough was perfect and not flimsy at all. Miraculously my cut-outs did not loose their form when transfering to the cookie sheet... wow. That had been a big problem in the past using other recipes. These were simple to throw together in a pinch, I had most all ingredients on hand, and the result was a very soft, chewy, buttery cookie that held delightfully. I am so happy with these! Thanks!

Pork Chops with Apples, Onions, and Sweet Potatoes

To me it wasn't a 5-star recipe, but it was very good indeed. I was surprised that my children were eager try pork chops this way, but they were willing. I used tart apples, and after sprinkling the brown sugar, I followed others' suggestions for adding cinnamon and nutmeg... and I even sprinkled a small amount of allspice. The end result was such a soothing winter-warming meal that didn't leave you feeling weighted down afterwards. The sweet potatoes came out resembling the taste of sweetened or glazed carrots. The chops I used were very thick and created excess juices, but that was ok. I made yellow saffron rice as a side and it went perfect with the whole dish.

Mexican Spiced Turkey Tortilla Soup

This was almost a flop. I thought it was too watery, and lacked flavor or something (like an incomplete recipe). What saved it was the dollop of sour cream I added to each individual bowl (on top of the crushed tortilla chips and shredded colby/jack cheese). However, this recipe could have used a can of green enchilada sauce, some dark red kidney beans or black beans, and about a 1/4 cup of Cheez Whiz or Velveeta (stirred in and simmered during the last 3 or 4 minutes of cooking).

Bottom Round Roast with Onion Gravy

I almost passed this recipe up after reading some of the reviews. Glad I tried it because it turned out great. I cooked the roast just as the recipe suggested, and it is true... lifting the lid to check the progress during cooking only lengthened my cooking time...darnit. Reading others' suggestions, I added extra herbs/spices (Season Salt in place of salt, Tony Chachere's Creole Seasoning, Cavender's Greek, a pinch or two of Thyme, and two whole peeled cloves of garlic). I decreased the onions to 3 instead of 6, and substituted Beef Broth for the water... great results. The roast was tender and juicy, and the onion gravy was to die for. Husband and kids ate it ALL up.

Easy Punch

I made this for a small semi-formal school banquet for about 40 students and faculty. This was the perfect punch recipe for such an occasion as the ingredients we cost-friendly and there was plenty enough to go around, even for seconds. I used strawberry Koolaid for the flavor. It was delicious and everyone loved it. It suited the occasion perfectly. Thanks.. It's a Keeper!

Mapled Ham

This was a big Fathers Day hit at our dinner table. I really wanted to try this glaze but all I had to work with was a large bone-in half-ham. So I baked it following the package directions, then the last hour is when I added pineapple rings, cherries and cloves. It made a beautiful presentation and was just as tasty as it looked pretty. I arranged ham slices on a pretty platter, poured some of the glaze over the meat, and garnished the edges with the pineapple and cherries. Very nice.

American Lasagna

Delicious! The whole family enjoyed. I divided the mozzarella into 3 parts so there would be some left for the topping. The lasagna was just a little dry. I must have simmered my sauce too long and lost the moisture it needed. I should have replaced the liquid that evaporated or added extra to it. This was a sweet sauce, but for those who like a more robust flavor, try stirring in about 1/4 teaspoon (or just a small squirt) prepared mustard to your sauce at the end. It will blend with the brown sugar and give the sauce a tangy kick. I will make this again. It was very good.

Warm Crab Parmesan Dip

It was pretty good. My party guests enjoyed it with chicken flavored crackers and tortilla chips. It was a quite oily on top just coming out of the oven, but I blame the amount of mayonnaise for that. The dominant flavors in this dip were by far the garlic and parmesan - could hardly tell the crab meat was present. I'll probably try this recipe again in the future, so I'll make sure to use 4 smaller-sized cloves of garlic (or just cut back) because the garlic compliments it, but not in overpowering amounts. I'll definitely cut back on the mayo and double or possibly triple the amount of crab meat.

Grilled Shrimp Scampi

This is a very delicious shrimp recipe, and I rated it a 5 even though I kinda messed it up (I will make again). What I did wrong: After marinating, I skewered alternating shrimp with onion, bell pepper, and mushrooms. Adding veggies to the kabobs is where I messed up because it caused the shrimp not to lay flat on the surface of the grill and it cooked unevenly. As a result, I had to cook the kabobs longer for total doneness, so some of the shrimp were tough and overcooked, whereas others were undercooked. Next time, I will skewer shrimp on their own skewers. The veggies were a hit, so they'll get their own skewers, too.

Hamburger Steak with Onions and Gravy

Baked Whole Cauliflower

Lol.. my kids walked into the kitchen and saw this big thing I had just pulled from the oven and said "Mom, What's THAT???" They love their cauliflower, and boy did they inhale it. After they finished, they all ran up to the stove to see if there were any "seconds"... but it was already gone. I steamed mine in the microwave, and it turned out great. Had a little trouble getting the crumb mixture to stick to the surface, just had to work with it a little. I served it as a side to the "Easy Caramelized Onion Pork Chops" recipe on this site. It made a very nice family meal.

Easy Caramelized Onion Pork Chops

What an easy, delicious, low cost/LOW CARB pork chop dish! I scaled my recipe to 6 for my slightly larger family and it worked out great. I also added a little of both chicken & beef boullion granules to my water (as suggested by others), otherwise following the recipe to the "T." My family is very pleased! As a side, I also prepared the "Baked Whole Cauliflower" recipe from this site..... it was the perfect accompanyment! Thanks!

Salsa Chicken

I found this to be quick, easy, convenient and tasty. Although it seemed to turn out a little too runny for my liking, the juices, nevertheless were quite tasty and were great served over a bed of hot rice. I used On The Border Mild Salsa. My kids said they really liked this dish, so I may make it again in the future simply because it is a fast and very healthy, hot meal to prepare amongst our busy schedules.

Restaurant-Style Potato Salad

I'll be the first to say right off that I've never been a fan of potato salad.....it has to have a certain taste/texture for me to take even a second bite. But after I read all of the ratings/reviews for this recipe, I had to give it a try for our big July 4th family cookout. I was nervous about making it because my husband first of all normally hates the stuff, and second, I've never been what you would call a very good potato salad maker. Not only did my husband devour this potato salad, but so did all the rest of our family and guests, even a 15mo. old! Everyone was helping themselves to seconds, even thirds until the serving dish was empty. I didn't have pimento or fresh white onion on hand, so I used dehydrated minced onions, and omitted the pimento. The flavors and textures mingled together to make the perfect taste. This was so much better than I've had in a restaurant. This was some good stuff :)
