About this Cook
Hi! My name is Alyssa and I'm a Junior Marketing major at Murray State Universiy! I love, love, love to cook. I've been cooking seriously for about three years, but I grew up in the kitchen with my parents and grandma. I'm going to Italy to study for a semester just because I love to cook and eat Italian food!
My favorite things to cook
I love to cook pasta dishes with lots of basil, garlic, and onion! I also have tried my hand at Cajun cuisine, as well as Asian and Mexican. I can make some killer chicken and shrimp enchiladas and awesome salsa! Of course I can deny my love for soups too!
My favorite family cooking traditions
I love Thanksgiving because my mom makes AMAZING Toll House pie! I also think it's so funny that even though older relatives have passed on, and older siblings have moved away, we still make enough food to feed 20 people even though it's just Mom, Dad, and ME! We are such foodies.
My cooking triumphs
I have to say my most proud moments have to be either when I made some excellent sushi on my first try, or maybe when I made shrimp and crawfish etouffe. Or how about the fact that I live in a teeny tiny apartment with a teeny tiny kitchen! That's a cooking triumph in itself!
My cooking tragedies
Oh there have been many... I've only made a couple of things that were truly truly inedible. One would be some weird chinese noodles that I tried to make that ended up like a big ball of gelatinous goo. Another would be some white bean soup that looked SO GOOD, but I think I burnt my roux because it tasted like death. With every tragedy though, there is a lesson!

Seafood Enchiladas
This recipe was awesome! This was my first try at any kind of mexican food and it was great. I used boiled, shredded chicken breast instead of crab meat though because that's what I had. I also added cilantro, a little cayenne pepper, a little Franks hot sauce, and a little extra 1/2 and 1/2 to the sauce. I also added a little green pepper and 1 clove of garlic to the onion mixture. I was just surprised at how awesome this turned out! Thanks Cathy!

Shrimp Linguine Alfredo
This was fabulous. I threw in some small diced tomatoes with italian seasoning that I had left over, and also a few shakes of red pepper flakes for just a LITTLE bit of spice. It made sort of a rose sauce b/c of the tomatoes but it was excellent!

Angel's Old Fashioned Beef Stew
I used red skinned potatoes and added a lot more pepper because I just like my stew to be very peppery. It was really good though!
