About this Cook
I am a mother to five awesome children! I am a recipe junkie! I love trying new recipes. I usually plan my weeks meals out in advance and try to put 3-4 new recipes on the meal plan every week. I love this site because it allows me to "idiot proof" my meals. I can find out what everyone else did or didn't do to improve it. It makes me look like a way better cook!!! My kids love it!! We rate every meal on a scale of 1-10. If it gets lower than a 7 we don't make it again! :)
My favorite things to cook
My husband is from Texas. If he had his way we would never have anything other than Mexican food! It is fun to try new things and broaden our horizons. I would try almost anything once! My family is usually pretty adventurous as well. As long as you throw a family favorite in every so often!
My favorite family cooking traditions
My children are still so young...my oldest is 7 and my youngest are 3 year old twins. The thing I look forward to the most is cooking with my children. Creating new things to try! They already love to watch me cook but it is hard to involve them all at this point. Soon!!
My cooking triumphs
I did catering before I had children. I would love to at some point go back to catering. I loved it!! Such a rush to see it all come together!

Fresh Asparagus Soup
This was a wonderful flavored soup!! I used chicken broth and milk products instead of soy. Even with skim milk it was creamy and delicious! My only problem was the asparagus was stringy. I even cooked it very well and used my emulsion blender. I would try it again for sure!

Roast Sticky Chicken-Rotisserie Style
I made this for dinner last night. It was very good. I believe next time I put the rub on and let it sit for 24-48 hours. My dh and I were amazed that there was one flavor on the outside and it was very different on the inside. It needs more time to all come together. I made it beer butt style with red wine in the "cavity". I then added the red wine to the drippings to make gravy. WOW! It was amazing! I wasn't sure what the red wine would do but it was awesome!!!

Oatmeal Cake I
Ok...WOW!!! I made this to take for my son's class and I was afraid looking at it, that it wouldn't be kid friendly. They completely devoured it!! This is so delicious!! It looks ok...but the taste is outstanding!!!!! I am not a huge fan of coconut but you can't skip that step. It becomes this amazing crunchy coconut topping.....YUMMY!!! Thank you!!!
