Fluffy Pancakes

The flavor on these is outstanding, and they cook up really tender, with nice crisp edges. I found them difficult to flip, though, since they were so delicate, but the result is wirth it, even if they do splat a bit.

Turkey Brine

I used a variation of this for my bird this year to rave reviews. People said they had never tasted a better bird, and I am inclined to agree! I did half broth and half apple cider, mainly because I like a little sweetness, and because I only had 2 quarts of broth. Also added 1/2 cup brown sugar, and skipped the savory, since I didn't have it, and used poultry seasoning instead. It was SO good! I then cooked it according to Alton Brown's recipe for a brined bird, with aromatics in the cavity, and with fresh sage and whole garlic cloves stuffed under the skin. Delish!

Panna Cotta

This is so good! Better than the first time I had it, and that was prepared by Italian chefs! I used this recipe to fill about 100 small chocolate dessert shells for a cocktail reception. Beyond delicious - I will be making this again, and soon, but full sized.

Coconut Cake IV

Really, really good! I think it needs a touch of vanilla, but other than that, it's pretty darn good the way it is. Holds up really well - used it as the base of a wedding cake. Best a day or two later.

Corn Casserole I

This is really tasty! I brought it to work for a holiday luncheon, and everyone had at least 2 servings, and most people asked for the recipe. I made it in my slow cooker, for 3 hours on high. I stirred it a few times for even cooking.

Cranberry Hootycreeks

Sooooo tasty! I get way more cookies than the recipe states, but who's going to complain about that!? I made these last year for gift, and had nearly everyone come back and ask for the recipe so thay could make them again this year. The guys at work are figting over my last batch - they are pretty much everything you want a cookie to be!

Bacon and Date Appetizer

These are pretty darn tasty! I used the black label bacon, and it was nice, but next time I'm getting the thicker cut stuff from the meat counter. One of the guys at the dinner came late, after everyone else had tried them (and loved them). He was looking at them suspiciously, and was enthusiastically talked into "doing the date." His comment? "Oh, there WILL be a second date."

Ratatouille Bake

Wow, this is stellar! I'm not normally a fan of eggplant, but I could really eat this every day. We didn't have parsley on hand, and I'm not sure what it would have added. Used fresh ravioli instead of frozen, and didn't bother pre-cooking it. I added a yellow squash, too, because we didn't have quite enough zucchini. This will go on permanent rotation.

Basic Pasta

This is perfect dough. So elastic and easy to work with, very tender when cooked up. I was a little shocked to see there was no cooking time listed, but it will vary base on the size of the pasta you cut. We made fettucini, and it boiled for maybe 4 minutes. yum! Very tasty, so much better than dried pasta. Made it for my dad's birthday, and he couldn't stop eating it.

Chantal's New York Cheesecake

Wow. Just wow. I made two fo these for a wedding, an it was raved about. I made one gluten-free by changing the crust and using gluten-free flour, and it didn't taste any different from then "normal" one. Perfect texture, taste, directions, everything. No cracks, bubbles or anything. Will be making this again soon.

Sopapilla Cheesecake Dessert

Um, really, really addictingly good. We had some exactly as the recipe states, and that was good, but then we tried them drizzled with a little honey, and that took them over the top (4 star w/o honey, 5 with). Tasted like ChiChi's Fried Icecream, if any of you remember that... I'll be making these again, soon!

Rainbow Cookies

Wow. Just wow. It might be difficult to spread the dough out into the pans all the way, but it will spread as it bakes, and you can trip it up if you need to. I made these a year and a half ago, and my brother keeps asking me to make them again. They are a lot of work, but certainly worth it.

Glazed Almond Bundt Cake

I made this as a layer cake for my grandparent's 70th anniversary party. It was fabulous, and will make it into our normal rotation. One of the best cakes I've ever made, and I make a LOT of cake. My grandpa, who is pretty short on words, said it was especially good.

Strawberry Cake from Scratch

Easy Apple Coffee Cake

My co-workers LOVED this! I replaced the nuts with oatmeal (we have a nut allergy) and used canned apples (not pie filling) to save some time. It was fantastic, even made a few of the guys swear, and one kissed my hand!

Award Winning Soft Chocolate Chip Cookies

These are just about perfect. Great flavor, great texture - not at all cakey - chewey on the inside, crisp on the edges. I did add a T or vanilla instead of the t, and sprinkled some with Kosher salt, 'cause I like a little salt with my sweet. It really doesn't get better.

Chicken Stew With Coconut Milk

Really, really good. I made this for a group of women coming for dinner. It was so easy to prepare, and tasted wonderful. I accidentlaly used the entire can of coconut, but other than that, followed the recipe precisely. Everyone raved, and I got a few requests for the leftovers and recipe. Who thought a microwave meal would be this good?

Apple Pie by Grandma Ople

Yes, it really is that good. What the butter/sugar mixture does to the crust is unbelieveable. I made this two weeks ago, and people are still telling me how good it was, and everyone wants the recipe. I thought it was a lot more work than my regular recipe (and people rave about it, too!), but the difference in the crust alone is worth it!
