Easy Apple Coffee Cake

My co-workers LOVED this! I replaced the nuts with oatmeal (we have a nut allergy) and used canned apples (not pie filling) to save some time. It was fantastic, even made a few of the guys swear, and one kissed my hand!

Award Winning Soft Chocolate Chip Cookies

These are just about perfect. Great flavor, great texture - not at all cakey - chewey on the inside, crisp on the edges. I did add a T or vanilla instead of the t, and sprinkled some with Kosher salt, 'cause I like a little salt with my sweet. It really doesn't get better.

Chicken Stew With Coconut Milk

Really, really good. I made this for a group of women coming for dinner. It was so easy to prepare, and tasted wonderful. I accidentlaly used the entire can of coconut, but other than that, followed the recipe precisely. Everyone raved, and I got a few requests for the leftovers and recipe. Who thought a microwave meal would be this good?

Apple Pie by Grandma Ople

Yes, it really is that good. What the butter/sugar mixture does to the crust is unbelieveable. I made this two weeks ago, and people are still telling me how good it was, and everyone wants the recipe. I thought it was a lot more work than my regular recipe (and people rave about it, too!), but the difference in the crust alone is worth it!

Cornbread Salad

First of all, this is very pretty. One of my guy friends had at least 3 helpings, and took some home, too. I used half kidney beans and half black beans. It makes a LOT of salad, so unless you're going to a larger function, maybe try to do half a batch (Ww had 8 people, and ate less than half). I would have liked more cornbread, so that can stay the same, perhaps. May make this again, but a smaller version with more cornbread. Also, this was a bit more sticky/mushy the second day, so try to make it the same day as the event, unless you want it more like a potato salad consistancy.

Vintage Lemonade

This lemonade is delicious! I peeled the leom with a vegie peeler, and then followed directions exactly. It was kind of strong, which we liked, since it's perfect after it's in a glass of ice for a few minutes. I had to make 3 batches this weekend, and everyone raved.

Tomato and Mozzarella Bites

If I could rate these higher, I would - so simple and easy to make but people are always blown away by them. The least experienced cook could make them and people would think they are a kitchen superstar. I use grape tomatos cut in half, and the small fresh mozzerella balls - they are easy to find at Sam's normally, and way cheaper there than I've seen anywhere else. I also like to add a little garlic, fresh pepper and sea salt, and marinate the assembled "bites" in the dip, rather than serve them seperately. These keep and travel pretty well, so they are easy to take to a buffet.

Baked French Toast

This was really good. I made it for my birthday brunch, but didn't have time to make the syrup, so I just used maple syrup instead. Also, I turned the peices half way, and baked for a total of 40 minutes, and reduced the cream and eggs as recommended by some reviewers, and I can't imagine it would be better with more liquid. People raved about it. My only complaint is that I didn't make enough, and only had a bite or two left by the time I made my plate up! Several people asked for the recipe.

Grandma's Moist Cake

Yummy cake, although I wouldn't call it a yellow cake. I'm not sure what I would call it, though. I was out of regular milk, so I used buttermilk - oh my! This was a very light, tender moist cake. The flavor is marvelous - my co-workers raved, and that was without any frosting! Several people said it was just like their grandma used to make. We're in the South, so you kow that's a compliment! This would be perfect with fresh berries, icecream or custard. I think any frosting other than a glaze might overpower the delicate nature of the cake.

Easy Pavlova

This was fantastically easy, and tasted great, however, my merangue cracked terribly both times I made it. Once covered with the whipped cream, it looked great, but I would have preferred less cracking. We used about 1 cup of sugar, and used kiwi, nectarine, and blackberries instead of just kiwi. Will make this again for guests.

Apple Cake VII

I made this cake for a friend's 30th birthday. It's delicious! I added more cinnamon and nutmeg, chopped 2 of the apples because my hand was tired of shredding, used whole wheat flour and added about a cup of chopped walnuts. I topped it with Caramel Frosting VI from this site, and then made fall leaves out of gum paste, and sprinkled them all over the cake before the frosting set. The cake was moist and dense. People kept sneaking "just a little bit more" all night long, and one person hid a piece so he could have some on his flight home.

These are fantastic! Or, I should say they were, as my guests devoured them as quickly as I could take them out of the oven, and asked that I make another batch later that same night. I didn't use the chevril, and added a little parmesean cheese sprinkled on top.

Spice Cookies with Crystallized Ginger

Everyone LOVES these cookies. Several people have said these are the best cookies they have EVER eaten. So delicious; the crystallized ginger gives them a real ZING! I didn't dip them in the powdered sugar, and don't think they need that extra sweetness. Perfect without it!
