Key Lime Pie VII
Super easy and fantastic! Takes some time to squeeze those key limes, but well worth it. EVERYONE raved. I made 6-4" tartlets and had a little extra to make mini tarts as well - so adorable! Topped with a squirt of strawberry puree. Simply wonderful!

Sangria! Sangria!
Fantastic - very similar to the Sangria we had in Barcelona! Modifications I made: used blackberry brandy and omitted the lemon juice - thought that would make it too tart, saved the club soda and added it by the glass instead of mixing it in. This is my new favorite drink!

Chicken Enchilada Soup III
So delicious - identical to Chili's. I used all chicken broth instead of the water and added a can each of whole kernel corn (drained), black beans (rinsed and drained) and petie diced tomatoes (drained). Also added 1/2 tsp dried cilantro. Serve with tortilla strips, chunks of avocado and sour cream. YUM!
