I increased the recipe by 50% to make 12 and added a teaspoon of imitation vanilla. I baked 6 in a large metal muffin pan, and another 6 in a slightly smaller silicone muffin pan. The larger metal pan worked better. Tasted great, but don't make my mistake - let the muffins cool in the pan before removing them. They will break if you try to turn them out while they are still warm.
