Brazilian Black Bean Stew
I used authentic, fresh Mexican chorizo but had no mango, so used a nectarine instead. Let me tell you, this dish is sweet and spicy and delicious. Everyone in the family liked it. I didn't add any additional spice (just cilantro) not even the salt and it was perfect because of the highly spiced chorizo! I did simmer it another 15 min after adding bean to cook down the tomatoes. Try it!

Spinach Stuffed Chicken Breast
I followed advise of reviewer and marinated chicken, partially cooked bacon ahead, and used her filling/spice suggestion. And it was fairly good, but not great. I tasted the filling before baking and it was yummy. However,I think the cheese and sour cream melt out of the chicken during baking, leaving it a bit dry and plain. This is good, but not great recipe. Needs bit more tweaking.

Buttermilk Pancakes II
These were the BEST pancakes I've had! I let eggs, melted butter, and both milks sit out for an hour before starting. As recommended, I added a dash of fresh lemon juice and vanilla. And right after I poured 1/4 cup batter per cake on the hot griddle, I sprinkled in fresh blueberries. I ate several plain--terrific! Halved the recipe and it made 15 four inch pancakes. This is going to be a regular at my house.
