Slow Cooker Enchiladas
We loved this meal, it's sooo easy! I made a couple of changes, I added a can of rinsed, drained black beans and used frozen, pre-cooked, diced chicken, whatever amount I had left in the bag. This is what I did: Place a tortilla in the bottom of the slow cooker, put a layer of chicken, then a layer of black beans, sprinkled some taco seasoning on top then put a layer of the cheese mixture. Kept layering until all ingredients were used up and finished with a little leftover cheese. Served this over white rice that was leftover from the night before. This was so good, I can't wait to make it again. Like others said, you wouldn't think that the soup makes sense, but it does, just try it!

Slow Cooker Chicken and Dumplings
One of my favorite comfort food recipies! I do pretty much everything as said except I use a small roll of biscuits (grands 5 pack) and tear them into small pieces. The biscuits have to cook at least 2 hours, so plan accordingly. Excellent and easy recipie for nights that I get home early enough to add the biscuits!

Slow Cooker Chicken Taco Soup
Both my husband and I really enjoyed this meal. I had initially chosen it for him, as I am not a huge fan of spicy or black beans, but I liked it so much we will have it again as leftovers tonight! The only deviations I made were as follows: Didn't have the beer so I left it out. Instead of packaged taco mix I used one that I made from the taco seasoning recipie on this website, it's great!!! I added just about a tbsp. of the seasoning. It had just enough spice for him and not too much for me. I put everything in the crockpot at once and cooked for 4 1/2 hours, it came out perfect!!!
